Week 44, 2019 with Trim Healthy Mama

The menu plan for week 44 is complete. We returned Sunday evening after a road trip to Columbus to celebrate my birthday. The main reason for the trip was actually to see the OSU vs. Wisconsin football game, but we were also able to connect with family and friends. I will admit that staying “on plan” did not happen. I splurged on my birthday eve with a slice of 7 layer coconut cake at J Gilberts and once again on my birthday with my favorite Peasant Tortellini pasta at Scali’s.


The weekend was extra special because my son was able to join us on the trip. The fall color in the mountains was at it’s peak making for a beautiful drive. We took a break on the way home to enjoy the view and a glass of wine at Pippin Hill .

Now it’s back to reality!

Breakfast

The breakfasts planned for week 44 are basic and simple aside from the Sausage Ricotta Breakfast Casserole. It has proven to be a family favorite and I particularly like it because it is easily made and lasts for several meals. It also freezes well.

Lunch

During week 44 I have planned several new lunch menus. Months ago I planned to make the Taste of Home Casserole. Several THM comments on facebook gave this recipe accolades. I have had 4 cans of green beans in the pantry for months. It is time to give it a whirl. The Portobello mushroom should satisfy my pizza cravings and the quiche sounds quick and easy. I have promised myself to return to the THM cookbooks for inspiration.

Dinner

The dinner plans for week 44 include a side variety of proteins and flavor profiles. I am also removing 2 fairly large containers from the freezer to make room for the holidays.

The road trip was such a success. 9 hours each way can be grueling, but the colors were so magnificent in the mountains and the conversation so enjoyable, the time flew by. Now it is time for cooking and enjoying a more healthy eating plan. Bon Appeti!
