2021 Week 40 Menu Plan
The 2021 week 40 menu plan is complete. Our meal plan changed slightly last week. We went to lunch on Sunday with friends at The Porch…(my new favorite outdoor spot in Virginia Beach) and our daughter roasted a chicken for a family dinner on Monday. I have shifted the skipped meals to another week.
The 2021 week 40 menu plan has been formulated utilizing recipes from the Eatwell 101 website. All new recipes during the week have been taken from the Keto recipes on the site.
Breakfast
The breakfast plan is a mixed bag of recipes but relies heavily on eggs. It is rather industrious so it will be interesting to see if it goes as planned.

Only 3 dinners have been taken from the website since I have leftovers as well as cabbage leaves that I am anxious to make into cabbage rolls. I have a great recipe for cabbage rolls that I have used over the years that I hope to modify to make it low carb compliant. I have also selected several sides from the site that look intriguing as well.

Hits and Misses
I repeated the smoothie recipe that we had for the first time in Costa Rica. It ranks right up there with our favorite smoothies.
The taco casserole was soupy and I am not sure if it was because I froze it or made it incorrectly. The flavor was good, but the consistency…not so much. It is worth another try.
Recap
After nearly 2 weeks in Costa Rica we have reacclimatized and restocked…carefully because we off to a week at Myrtle Beach and Charleston mid month. I will be busy formulating an eating plan for the timeshare and making reservations at our favorite restaurants in Charleston. The adventures continue. Bon Appetit!
