2021 Week 39 Menu Plan

The 2021 week 39 menu plan is complete. We continue our vacation in Costa Rica and I have determined to have a non aggressive meal plan upon our return. I am thankful for some pre-made meals housed in the freezer.

Breakfast

After our return home I will be dependent on breakfasts right out of the freezer.

Lunch

Luckily I have a few lunches tucked away in the freezer as well. The only fresh creation will be the spicy bean soup which is easy because the ingredients are already in the pantry.

The dinners planned for 2021 week 39 are easy as well since several are housed in the freezer. I will pick up gourmet burgers on a grocery run and a pork tenderloin is always on hand,

The meals that I prepared during our stay at the timeshare ended up being quite successful, especially since we had limited kitchen conveniences. There was no oven, and I suddenly realized how very dependent I am on both an oven and a crockpot. We managed however and all of the meals were great and will be added to the timeshare meal rotation.

Recap

As you can see, we not only ate well while on vacation, but by planning ahead we needed very few groceries and had very little left at the end of our stay. By Friday we will return to normal, make several grocery runs, and enjoy home and family once again. Travel is great and Costa Rica is wonderful, but it is always good to go home. Bon Appetit!
