Something Fishy

My Mom made great fried fish.  It was a meal that I chose for my birthday meal a number of times.  She always fried Haddock using a boxed seasoning mix but she had the knack of frying it just right to be cooked through and crispy.  Yum.

Today I went grocery shopping with a few meals unplanned but suggested by the grocery ads. (What can I say, my daughter’s family is on vacation so The Bearded One and I can wing it.)  Haddock is on sale.  Perfect!  My daughter’s husband does not care for seafood so now is the perfect time to eat fishy things.

When I lived in Ohio for years (only a few months ago), Haddock was hard to find…even frozen.  Here it is in the Fresh Seafood case…and on sale.  We are still dieting so I looked for some ideas for lightening up the fried fish from my childhood. This is what I came up with and it is great!  I didn’t even want to use the tartar sauce I had made!  Mild, flaky, crispy…and easy!

Ingredients

Instructions
  1. Preheat oven to 450 degrees.
  2. Combine bread crumbs, parmesan, seasoning and salt in a shallow bowl.
  3. Put milk in a second shallow bowl.
  4. Dip fillets in the milk the press them in the crumb mixture. Place them on a cooling rack over a baking sheet.
  5. Spray lightly with Pam or other cooking spray.
  6. Bake 15 minutes. Enjoy!

      Hot tomato juice or stewed tomatoes were never my thing. We generally just have a vegetable or a salad with it.
