panko bread crumbs

grated parmesan cheese

cajun seasoning

milk

fillets
haddock (or cod or scrod)
Instructions
Preheat oven to 450 degrees.
Combine bread crumbs, parmesan, seasoning and salt in a shallow bowl.
Put milk in a second shallow bowl.
Dip fillets in the milk the press them in the crumb mixture. Place them on a cooling rack over a baking sheet.
Spray lightly with Pam or other cooking spray.
Bake 15 minutes. Enjoy!
