Menu Plan Week 82 with Trim Healthy Mama

The menu plan for week 82 will include several meals just for me.  Since the ‘Ole Buckeye will be traveling Thursday through Saturday, I will be eating leftovers as well as several meals stowed in the freezer for just such an event.

The plans for breakfast feature the easy breakfast bake (straight out of the freezer) which we will eat together and I will eat again while he is traveling.  The muffins and mufflets are already packaged in the freezer awaiting last minute meals for quick and easy prep.  I love the fact that they are always on hand as a backup.  The Tex Mex Scramble planned for his return simply sounds like an interesting change.

One additional recipe that I plan to make this week is a white bread that is made in the microwave.  Since it is a fuel pull, I am anxious to see if it is successful.  I would love a vehicle for enjoying nut butters or cheese spreads that actually makes a sandwich.  I have been making my own sour dough bread for several weeks now, but since it is an E bread, I can’t throughly enjoy it with an S meal.  I relish the possibility of having bread with eggs or a new pimento cheese spread that I am anxious to try.

The lunches planned for week 82 aside from the left overs that I will be eating when the ‘Ole Buckeye is away, will include two new E meals.  I have made a white chicken chili in the past, but this one looks simpler especially since it is made in the slow cooker.  The black bean stew sounds like a satisfying E meal as well.

The dinner menu for week 82 includes several of our family favorites that I intend to tweak in order to make them THM compliant.  The Sunday dinner planned is a recipe that caught my eye late last week…yum.  I am also anxious to try a new dessert, the Irish Cream Creme Brûlée planned for St Patrick’s Day.  It will accompany the Irish Pork Burger from Green Chef that my daughter raves about.

As I look back at last week, I must mention several very successful recipes.  Menu Plan Week 81   The first is the Crockpot Zucchini and Yellow Squash which I served with the pork tenderloin, along with the Creamy Cole Slaw.   The squash was basic, but the Cole Slaw was excellent especially since it is a Fuel Pull.

The cauliflower casserole is a side that I have made over the years, but I always felt guilty when enjoying its’ richness.  Now I savor it in combination with S foods and throughly enjoy it guilt free.  A huge benefit is that it makes a large casserole and can be combined with a variety of entrees.

For the first time since the holidays I made desserts.  I have stayed away from dessert recipes because so many of them have been a disappointment.  This week I made two, and both were extremely well received.  The Cheesecake pudding was paired with mixed fresh berries and the ‘Ole Buckeye could not get over that this creamy yumminess was on plan.  (I couldn’t get over how quick and easy it was.)

The Lemon Yogurt cake was a complete surprise.  It was very similar in taste to a lemon poppy seed cake.  We served it with whipped cream and blueberries.  Delish.  Unfortunately I didn’t take a picture and the dessert is long gone!

The meatloaf recipe, although good, would not be repeated without some modifications.  It was dense with ground beef and not as enjoyable as several other meatloaf and meatball recipes that I have made.

We have had yet another week of great eating.  The successes of sides and desserts are especially gratifying.  As we continue our journey with the Trim Healthy Mama eating plan, we also continue the discovery of exciting meals.  I will admit that it takes extra time and planning, but the results are definitely worth the effort.

As I move forward to a less complicated week, I will continue researching recipes to try, as well as family favorites that I can work to convert successfully.
