Menu Plan Week 80 with Trim Healthy Mama

The menu plan for week 80 is a no brainer.  We have a road trip planned beginning Wednesday and we do not plan to return until Monday.  As usual much of the travel to and from Charleston will be on the fly even though we are driving.  My only challenge is to plan the meals for the Tuesday before we leave to reduce the perishables as well as having something quick and easy for the Tuesday that we return so that I don’t need to do a lot of grocery shopping.

Peanut Butter Milk Shake  THM S

 

It seems like an exercise of futility.  I will admit that week 81 will be an entirely different story.  My daughter will be coming to visit for 2 weeks.  She has had difficulty implementing the Trim Healthy Mama eating plan and I am hoping to prepare a variety of meals that will stimulate her interest,  She has tried to follow the plan, but due to lack of time has been unsuccessful.  I will develop week 81 to include meals that she will totally enjoy but with special emphasis on ease of preparation.  A great deal of thought will be required.  There will be limited time to create the plans since we will be traveling.

I would be remiss if I did not discuss the hits and misses from this past week.

Creamy Maple and Brown Sugar Oatmeal  THM E

No picture of this microwave mess.  Please help!  I cannot seem to make oatmeal in the microwave without it boiling over, no matter how big the container.  Today I used a 8 cup pyrex measuring cup…over it flowed…all over the bottom of the microwave.

I must admit that I have not made this concoction for weeks now because I kept forgetting to prep overnight.  Guess what…wrong recipe.  I must have read through several versions before selecting this one.  (no overnight required)  I will say that it has a good overall flavor although I found it too sweet, so I will reduce the stevia the next time around and maybe up the salt.  Overall a good E breakfast if I can figure out how to keep the microwave clean.

Our Favorite Soup   THM S

 

May I begin by saying that the recipes from Briana Thomas are some of my favorites.  That being said, I had extremely high expectations for this soup given its’ name.  The soup was fine but certainly not “our” favorite in this house.  The flavors were good, but considering the number of ingredients, the amount of chicken, the time, and the expense, I don’t see a return visit to this recipe.  We have too many other soup options that we thoroughly enjoy.

 

 

Low Carb Spinach Feta Quiche Muffins  THM S

 

 

I have quite a few recipes for egg muffins and mufflets.  I decided to try this one because I thought it would be more quiche-like than the other recipes.  These little muffins although tasty and cleverly encased in the ham shell were not as enjoyable as others.  The ham shell was difficult to cut with a fork and didn’t add that much flavor.

This recipe was not obtained from a THM source but I think it would qualify as a THM S or possibly an E with far less olives.  The ‘Ole Buckeye and I happen to love olives so the flavors derived from the sauce made this dish particularly enjoyable.  I substituted a light dusting of THM baking blend for the flour called for in the preparation.

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

So there you have it.  A week of great eating at home and difficulty eating out, but I am dealing.  I will say that in preparation for our trip to Charleston as I began to pack, I panicked.  In my mind I had created a packing list.  I decided what to include for the weekend.  To my dismay, most of what I decided to pack did not fit.  (Thank God I tried things on.)  The slacks were too long, the dresses too baggy.  Panic.  It is not a good thing to come up with a plan for  suitable attire and find out at the last minute that your plans will not work.  I am still in limbo and we leave tomorrow!

I will be making due, but obviously I need a wardrobe refresh.  I guess I should be thankful, but at this point I just want the packing issues resolved.

The THM eating plan is working.  We are eating healthy, with an abundance of choices, and not feeling deprived.  Here’s to another week of great eating.  Hopefully we will be introduced to new and exciting foods and wines in Charleston.  I am excited to have the experience.  Bon Appetit!
