Menu Plan for Week 46

The menu plan for week 46 should have been easy but it ended up requiring quite a bit of thought.  The week ahead is filled with meetings, get togethers, carpooling and a Derby Party.  In between all of the activities I am trying to plan evening meals that I can easily get on the table in a short amount of time.  The basic plan for week 46 is to incorporate meals utilizing frozen reserves that need to be used (the chicken thighs and pork chops.)  We are also planning a casual dinner with a couple who are new to East Beach.  Since we are planning that dinner on Friday, Cinco de Mayo, it made the menu plan fairly simple.  I will make a family favorite chicken enchilada recipe, and a hearty, healthy kale salad.  Hopefully the ‘Ole Buckeye will make his famous guacamole as well.

Saturday brings a Derby Party requiring a “Southern”  hors d’oeuvre.  I signed up for deviled eggs, but since the evening is so close to Cinco de Mayo, I am planning a twist.  I have a new recipe for guacamole deviled eggs and this will be the perfect opportunity to give it a try.  Guacamole Deviled Eggs  I am fairly certain that our evening meal plan with be totally dependent on how much we consume at the Derby Party.

It will be interesting to see how the week progresses.  I am sure that there will some adjustments as there usually are.  It does look like both the weather and the activities will make for a fun week.  As usual food continues to bring us together with family and friends.
