Menu Plan for Week 90 with Trim Healthy Mama

A new week of planning has arrived and the menu plan for week 90 is complete.  I normally plan my meals around the weekly grocery specials, however this week’s specials were quite unimpressive.  In addition, after a week filled with entertaining guests, I find myself with a lack of motivation.  A week of creative cooking is not a priority.

My plans for breakfast during week 90 are basic.  In fact I am finding a breakfast routine that is not only filling and flavorful, but easily prepared and can be utilized over several weeks.  I can make breakfast cookies and mufflets, pop them into the freezer in individually wrapped portions and voila’ I have a quick no fuss meal.  I also have enough breakfast casserole left from last week for an additional morning.

 

The lunches planned for week 90 are fairly basic as well.  The quiche that I am preparing is an attempt to utilize the remaining broccoli before it spoils.  It is not quite enough to fulfill the requirements for the crustless broccoli quiche so I am adding several cups of spinach to the recipe.  I have my fingers crossed for the results since I am taking it to a friends to share at lunch Wednesday.  The ‘Ole Buckeye and I are helping her stage her home and pack for her move (her husband is deployed).  I want to provide an easy, yet special lunch.

I am planning a second attempt at a recipe for quesadillas.  I have made them in the past, but I plan to tweak the recipe to make it more to our liking.

I have a lot of repeat dinners in store for week 90.  I am loving the fact that I don’t have a lot of creative cooking to do.  The thought of spending a lot of time in the kitchen is quite unappealing.  My daughter is making us the Thai soup and the pork tenderloin is a no brainer.  The one and only new meal is the sweet and sour meatballs, originally on the menu plan several weeks ago.

So there you have it.  Short, sweet, and uninspiring.  I am making an extra meal this week (sausage, cheese, macaroni casserole) Sausage and Macaroni Casserole to take with us on Wednesday for our special military family.   Aside from that, my week entails very little cooking.  That will in no way affect our healthy eating.  I totally relish the fact that I can cook once and enjoy more than once.  It takes no extra time to save time.

I do want to take the time to mention several hits and misses from the past weeks.  First of all I must say that my all time favorite shake/smoothie is the Peanut Butter Blizzard.  It is so delicious!  I can’t believe that I can drink a meal and I feel like I have just had a decadent ice cream milkshake.  What’s not to love about that!

Another new recipe from last week was the Lasagna Soup.  I made it ahead since we were having guests.  It proved to be a quick and easy meal on the day of their arrival.  The soup was “ok”.  I found it rather bland.  If I make it again, I will use a spicy Italian Sausage.  Aside from serving it again this week to finish it up, I do not foresee its’ appearance on a future menu plan.

I prepared two desserts last week.  The Chocolate Cappuccino Cheesecake was a repeat and will be added to our family favorites.  It is really good.  The next time I make it I think I will make a trip to Starbucks for an espresso to add rather than plain coffee.  This is truly a 5 star THM dessert!

The other dessert that received great reviews was the strawberry pie.  I was not as much a fan as everyone else, but I will most likely make it again since everyone enjoyed it.

Hopefully by next week my creative juices will be flowing once again and I will plan a more exciting week of eating.  Until then we will continue our healthy eating following the THM guidelines and learning more and more each day.
