Chicken Fruit Salad

IMG_9779I found it!!  Over the years I have made a chicken salad in the summer that I have used for showers, for Sunday brunch, and for easy entertaining on our sailboat.  But I lost it!  Oh, for sure, I could most likely recreate it, but I was not certain it would be just right.  It is deliciously refreshing on a hot summer day and I have craved it this summer on the beach or the porch.

But alas, it has been found on Cook’s.com.  I could not wait to make it, but I forgot that the chicken needed to marinate overnight.  Today will be our lucky day.  For lunch we will have chicken salad.

Ingredients
Marinated Chicken
Salad
Servings: People
Instructions
  1. Combine the chopped, cooked chicken, juice, vinegar, salt and oil and let marinate overnight.
  2. On the day of serving combine all of the salad ingredients and mix carefully with a spatula being careful not to smash the fruits. Add the mayonaise and continue to mix carefully.
  3. Add the marinated chicken to the salad and chill.
  4. Serve on a bed of romaine and Enjoy!
Recipe Notes

The salad was good, but I remembered as we ate it, that originally I used Miracle Whip instead of Hellmann's.  Something was not quite like the old recipe and I think that was it.  Next time Miracle Whip it will be.

The salad is great for lunch or dinner and keeps well for several days.  Kids love it for the fruit and you sneak in the celery!

When you run low, serve it as a side.
