Chicken Fruit Salad
A chicken and rice based salad full of refreshing fruit with a crunch. Enjoyed by young and old, it is perfect on a hot summer day.

Ingredients
Marinated Chicken

Instructions
  1. Combine the chopped, cooked chicken, juice, vinegar, salt and oil and let marinate overnight.
  2. On the day of serving combine all of the salad ingredients and mix carefully with a spatula being careful not to smash the fruits. Add the mayonaise and continue to mix carefully.
  3. Add the marinated chicken to the salad and chill.
  4. Serve on a bed of romaine and Enjoy!
Recipe Notes

The salad was good, but I remembered as we ate it, that originally I used Miracle Whip instead of Hellmann’s.  Something was not quite like the old recipe and I think that was it.  Next time Miracle Whip it will be.

The salad is great for lunch or dinner and keeps well for several days.  Kids love it for the fruit and you sneak in the celery!

When you run low, serve it as a side.
