2022 Week 27 Plant Based Menu Plan

The 2022 week 27 plant based menu plan is complete…a day late and a dollar short. I find it extremely difficult to complete a menu plan during a Holiday weekend. For that exact reason this entire post will be short and sweet.

We enjoyed gourmet burgers and a salad supper for our family 4th OF July celebration. My tried and true salads were the following…

Cantaloupe Salad

Ina’s Greek Salad

What a great salad! This went together so quickly and the flavors were great. I did the mashed version and ate it as a sandwich. The ‘Ole Buckeye ate it as a salad with whole grain crackers. This is definitely rotation worthy, especially when grapes are on sale, which they have been lately.

Sonoma Chickpea “Chicken” Salad

The first few bites of this loaf made me question my judgement on making it, but as we continued to eat we enjoyed it more and more. It made enough for a cook once/eat twice meal which is always a plus. The next time I make it I will double the sauce so that there is more to slather on the top.

Vegan Meatloaf

I will admit that this was a “fine” breakfast (on the 4th of July), but certainly not worth all the effort. It did serve us for additional mornings.

Incredible Vegan Frittata

Originally planned for lunch, we had this for dinner and an additional lunch…quick and filling.

Red Pepper and Gnocchi Soup

I thought this was a miss until a day later. This needed to marinate longer and became quite enjoyable.

I am excited to visit Boston. Seafood is in my future, but a plant based diet will be part of the plan. I so love to travel and visit historical places. I also love to explore the great restaurants in the area. Thankfully my niece gave me some great suggestions. Bon Appetit!
