The 2022 week 1 menu plan is complete. I must say that getting this together took a last minute miracle. My daughter and her significant other tested positive for Covid on Monday morning. Originally the plan was to share several meals during 2022 week 1. That plan was quickly shelved. Since the ‘Ole Buckeye has been sick for the past week, just beginning doctor’s care after the holiday wait, I decided to come up with a plan that works with food on hand. It definitely isn’t pretty, but it will work.
Breakfast
I went for ease at breakfast. I continued to have berries that needed to be utilized so the oven pancake it is. The sausage casserole is always on the rotation. Both choices are favorites and will feed us for several mornings.

Lunch
The butternut squash soup was planned for last week, but never made an appearance, so it is on the menu. The Chowder makes it’s first appearance and will use up the jalapeƱos on hand.

Dinner
The dinners planned for the week are family favorites aside from the brisket. Just before the holidays Aldi had a seasoned brisket on sale. It has been in the freezer waiting for a trial dinner. We have salmon in the freezer (half of a wild salmon from Costco which we saved.) Chicken enchiladas are easy and a tried and true family recipe housed in the Benington family cookbook.

Recap
After nearly a month of holiday celebrations, birthdays, and travel we are returning to normal. Hopefully we will get everyone healthy again and enjoy time together. Our goal as always is to incorporate healthy eating with family and friends. I will continue my quest to discover new recipes and learn about the health benefits of food and supplements.
