The 2021 week 50 menu plan is complete and it is the final menu before our Christmas in Aruba. We purchased 2 rotisserie chickens at Costco last week and not only did I make stock but I have lots of cooked chicken for the recipes planned for both lunches and dinners.
Breakfast
Favorites fill the bill in the mornings. I still have the sausage biscuits and will freeze several for the departure morning on Monday.

The 2021 week 50 features soup for lunch utilizing much of the rotisserie chicken and providing multiple meals.
Dinner
Lots of chicken meals are planned this week. Midweek the ‘Ole Buckeye has requested brisket from Mission BBQ. The forecast for Saturday calls for 75 degrees so I plan grilled ribeyes. We will finish the week with sausage and peppers using up the remaining vegetables.

Hits and Misses
As it turned out, the ‘Ole Buckeye was not feeling well on Monday so we ended up having soup for dinner. This soup wasn’t anything over the top special but it certainly fit the bill for a light dinner.
I like to use cauliflower rice as a low carb side, but many of the recipes lack flavor. This one however is exceptionally good. I served it with chicken enchiladas and did not add any cheese to the top. The 17 year old spooned her serving over chopped romaine with a little dab of sour cream. I will definitely keep this as a “go to” side for dinner or for a flavorful low carb lunch.
This is our all time favorite slow cooker meal…it is super quick to prepare and the ultimate comfort food. I found a particularly lean chuck roast this week and dinner was outstanding. This recipe is equally good using a pork roast. If you haven’t tried it, you are missing out. Ultimately combined with mashed cauliflower and creamed spinach…Yum!
The ‘Ole Buckeye loves creamed spinach. It is his favorite side to order if it is offered at a restaurant. This new recipe was over the top. I used half of the gruyere cheese that the recipe called for and would reduce it further the next time. In fact I would reduce the cream cheese as well. However with the changes this has the potential to be a future favorite. Decadent.
Desserts
This festive dessert has become a new tradition at our house. It is full of zesty holiday flavor and quick and easy to make. Hoorah for the return of fresh cranberries!
A tradition that the ‘Ole Buckeye loves is snacking on Chex Mix…the original chex mix.
Recap
Last week was interrupted by the family dealing with Covid. While most have recovered, my son has not. The ‘Ole Buckeye and I are hoping to stay healthy. Our Christmas trip hangs in the balance. I spent the week preparing many of the appetizers and treats that have become tradition for the holidays. We wait to see what the week ahead brings. In the meantime…Bon Appetit!
