2021 Week 16 Menu Plan

The 2021 week 16 menu plan is complete. I guess it is important that I relay that over the past weeks I participated in a 12 day event called Awakening from Alzheimer’s which included 12 separate interviews with 12 of the world’s foremost authorities in the prevention and reversal of Alzheimer’s and cognitive decline.

Take Away

My biggest take-away from the series is that sleep, diet, exercise, curtailing stress, and select supplements can all contribute to maintaining a healthy brain. Although the Doctors were not in 100% agreement with diet…some favoring Keto, one favoring some good carbs, and one closer to a plant based diet, the basic focus was on good fats, lower carbs, no sugar and lots of above ground vegetables.

I hope to delve into this information more aggressively while reorganizing the choices I make toward creating a menu plan. The 2021 week 16 menu will be a week filled with Keto meals. There are no plans to go to a strict keto diet at this point, but many of the menus in the past have been slanted toward a more keto diet, since many of the S meals on the THM diet are keto. I have decided for this week’s plan to stick solely to keto meals.

Breakfast

Aside from the smoothie all of the breakfasts planned for the week are new and untried. The only one I have misgivings about is the keto oatmeal.

Rebekah’s Keto Egg Casserole

Keto Peanut Butter Smoothie

Fluffy Keto Pancakes

Keto Oatmeal

Lunch

The lunch plan for the week is all new. i have made portobello pizzas in the past, but this is a new rendition.

Avocado Tuna Salad

Martha Stewart’s Favorite Egg Salad

Keto Instant Pot Soup

Personal Portobello Pizza

Caveman Chili

Snacks

I have included one new snack recipe that caught my eye.

Chocolate Peanut Butter Keto Cups

Dinner

I have two new recipes for dinner and a family favorite lasagna. I will make enough of the pork chops to eat again next week. The stuffed pepper skillet sounds like a meal that will please the ‘Ole Buckeye.

Stuffed Pepper Skillet

Parmesan Crusted Pork Chops

White Lazy Lasagna

Hits and Misses

Luckily we had only hits this week. The taco pie was easy to make and easily created two meals. I served it with sliced avocado. Yum.

Keto Taco Pie

I have been lax about making drinks and smoothies, mainly because the ‘Ole Buckeye is not a fan. So often I would prefer a beverage to a meal so I plan to incorporate more in the future.

Keto Peanut Butter Smoothie

This soup was sooooo easy and had great flavor. A big plus…eat again portions.

Spicy Bean Soup

This salmon preparation has been enjoyed in the past. This time I forgot that I changed the recipe previously deleting the cheese. It is definitely much better with only the sauce and no cheese.

Ultimate Salmon Filets

Recap

I have been following a THM eating plan for several years. Many of the meals that I am now making are THM S meals most of which fall into the keto category. I have a variety of new keto recipes that I am anxious to try. It seemed like a good time to try a full week of keto eating. I will continue to explore the world of healthy eating, but with the goal of enjoying what we eat. Bon Appetit!
