2021 Week 11 Menu Plan

The 2021 Week 11 Menu Plan is complete and includes several new recipes. We will be sharing dinner with our daughter one evening and taking dinner to our son’s on Saturday to share with our daughter and the 17 year old. The rest of the family is scattered for the weekend. Our son and daughter in law will be celebrating their 21st wedding anniversary in NOLA and the grand girls have soccer tournaments all weekend. Our daughter is house sitting (and puppy sitting).

Breakfast

The only new recipe planned for breakfast is the egg bites. I am relying on eat again offerings nearly all week. BAM cake is nearly always in the freezer and a repeat of THM pancakes is always welcomed by the ‘Ole Buckeye. I hope to make the Almond Crumb cake as a treat.

We will celebrate St Patrick’s Day with our once a year Irish corned beef and cabbage. One new meal planned is the Chicken Saltimbocca which I will take for our family dinner together on Saturday. The other is a Big Mac Salad, which I have wanted to try for quite some time.

I must admit that I have had this recipe on the menu several times but it never hit the table. The biggest reason is that it is fairly labor intensive for a morning preparation. I decided that it would be advantageous to do part of the prep the night before. That ended up being the key. This breakfast casserole is more “meaty” than “eggy” and very tasty. It would be perfect for brunch and is house guest worthy.

Let me begin by saying that the ‘Ole Buckeye really likes lasagna. When I found this recipe I decided that I had to give it a go. It was the “with Noodles” that got my attention. This was a labor intense recipe with not enough flavor or texture for that matter to warrant another try. In fact I even find it unfortunate that we will have it once again since there was plenty left for another meal. In fact we had it in the place of brisket…leaving that for the future.

Do you ever feel like you are on a never ending cycle, when nothing is ever completed. That is how I am beginning to feel as Monday evening approaches…the optimal deadline for the next week’s menu plan. I am finding it more and more difficult to be enthusiastic about the whole process. That being said…I am always glad when it is complete and I have the ingredients on hand and a plan in mind. So I continue planning, shopping, and preparing…and the result is healthy, delicious meals.
