If the 2021 week 10 menu plan looks familiar…it is. Although we enjoyed the dinners as planned during week 9, the breakfast and lunch plans ran amuck.
Breakfast
The ‘Ole Buckeye consumed all of the blueberries and we ran short on eggs, making the planned giant pancake and the sausage and caramelized breakfast bake an impossibility. Luckily the keto egg bake served us more mornings than planned. The ‘Ole Buckeye made oatmeal several mornings, and I simply didn’t eat. I routinely eat breakfast either very late or not at all. Regardless that moved the breakfast plans to week 10.

Lunch
We had so much soup left from week 8 that I never made the Cauliflower Chowder. Although I made the cheapskate soup, there is enough leftover for several lunches during week 10. Thus the chowder recipe reappears.
Dinner
The dinner plans for 2021 week 10 includes only one new recipe. I am not a slacker, just don’t want to plan on more that I can handle. The meals planned for Wednesday through Friday are easy fixes. We receive our second dose of the Moderna vaccine on Wednesday morning and it is my understanding that the majority of those taking the second dose are under the weather for a few days…very tired being the prime complaint. Thus I am planning eat again menus for those days.
Hits and Misses
This new egg bake was delicious and fed us for several mornings. I sautéed colored peppers and layered fresh spinach over them with diced deli ham. This is a great recipe to utilize left over veggies and meats. I foresee that it will also be great for our timeshare weeks.
Keto Egg Bake with Cream Cheese
Our Saturday menu became a family meal with our son and the 17 year old. I was making a new recipe so I was uncertain of the outcome. Everyone loved it and there was enough left for the ‘Ole Buckeye and I to have it during week 10.
I served the tenderloin with baked acorn squash, glorified cabbage, and the winter kale salad we love so much. I topped it off with the Raspberry Cream Cheese Coffee Cake.
This acorn squash is always a hit and oh so easy. All I do after scraping out the seeds is add 1/2 Tbsp Butter and 1 Tbsp of sugar free maple syrup (Lakanto) to the cavity and brush the rim with olive oil and sprinkle with S & P. Bake for 50 minutes at 350 degrees and voila! Delish.
I do not use this recipe for coffee cake…it is definitely a dessert. In fact it is our all time favorite Keto dessert…hands down.
Raspberry Cream Cheese Coffee Cake
I hosted out Book Club this week. The book I chose was Eleanor Oliphant Is Completely Fine. I highly recommend…one of my top all time fiction reads. To go with the theme I served Walker’s Scottish Shortbread and my homemade scones. I made 2 batches of scones. The first was the original recipe. For the second I used swerve as a sweetener (I ran out of sugar!) I always add dried cranberries and chopped walnuts. The second batch was a little doughy…not sure if that was because of the sweetener. As usual very little eaten by those attending and a lot left. The ‘Ole Buckeye is on cloud nine…
Recap
I must say that we had another great week of eating and many were eat again offerings. I plan my menu often not knowing how many meals will feed us multiple times. More often than not I plan too much and our refrigerator is overwhelmed with food storage containers! The week ahead is not very adventurous, but will still be enjoyable and include healthy meals.
