The menu plan for week 9 follows 4 days of cooking for the grand girls and a weekend of one on one time. (truly a favorite thing). Now I need to return to more structure and create a new plan without a lot of time. My daughter will be traveling for part of week 9 and part of week 10. I hope to utilize several meals from the freezer that will only feed the two of us. In fact I would really like to make a huge dent in the amount of partial meals that are taking up freezer space.
Breakfasts during week 9 aside from bacon and eggs over the weekend will consist of several individually wrapped THM meals carefully tucked away in the freezer drawer. In addition I have an entire frozen blueberry pancake. Cheers to no morning food prep!

The lunches for week 9 are based on simplicity as well. The freezer holds a batch of cauliflower soup (hopefully it is successful after being frozen), as well as the forgotten frozen peppers I found stashed in the back corner of the freezer. The rest of the week…very simple.
The dinners planned for the week require very little thought or prep. The only new recipe planned for the week is the Hubby Lovin’ Chicken on page 218 of the Trim Healthy Table Cookbook. Last week on facebook a multitude of positive comments were posted about this recipe. It looks very similar to a Country Chicken Kiev recipe that I have made in the past, so I am anxious to give it a whirl. All of the other entries are repeats including one that is already in the freezer! I’ll bet you’ll never guess that both Italian sausage and peppers were on sale!
So there we have it. I have a menu plan with very little fuss and the ultimate goal of creating freezer space. Bon Appetit.
