2020 Week 3 Menu Plan
Week 3 2020 was orignally planned to include a trip to the National Collegiate Football Championships in New Orleans on Monday, January 13th. The plan was to arrive on Sunday, go to the festivities and game on Monday, and enjoy two additional days in the Crescent City. We hoped to return to the World War II museum and enjoy the fabulous food the city offers. Our itinerary also included a stop in Atlanta on the return trip for a few days to attend the National Home and Gift Market in the Americas Mart. I continue to have a business license and planned to return once more –most likely for the final time. Unfortunately Clemson dashed our plans. We still have not recovered from the disappointment!
After much thought, I convinced the ‘Ole Buckeye to do a road trip to Atlanta. We had carved out the week for travel…so why not? Decision made, we would drive to Atlanta, experience gift market and be sure to return to Ray’s for the ‘Ole Buckeyes’s all time favorite shrimp and grits. (Actually the grits helped seal the deal.)
So off we go. A week spent much differently that we had hoped, but still an adventure. The menu plan for 2020 Week 3 reflects not much planning! In fact I stowed as much in the freezer as possible to prevent spoilage while we were gone.
The ‘Ole Buckeye is not a fan of market, so he will plan to visit the Collegiate Football Hall of Fame. I am sure he will find additional interests as well.

When I spotted this recipe it sounded great. Since I routinely have all the ingredients on hand, to add it to the lunch rotation was a no-brainer. I adjusted the recipe by using Swerve in place of sugar. I used almonds but deleted the noodles for serving. This was very good and would be great in warm weather as well. It is very flavorful and refreshing. Next time I might add cilantro as well.
I thought I would repeat a link to recipes for two family favorites…the Creamy Mushroom and Leek Chicken Breasts and the Sheet Pan Fajitas. They continue to be in our top picks, The evening that I prepared the chicken breasts I tried an Arugula Salad…simple and very good.

When I read the recipe for this Loaded “Potato” Soup I was skeptical, but the reviews were outstanding, and guess what…so was the soup. This will be added to one of our all time favorite soups. Definitely worth a try.
It occurred to me that since we do so many road trips that writing about how we travel might be of interest. I plan to blog about this trip and see how it goes. I will admit that the menu plan for 2020 week 3 is certainly of no interest but maybe the coverage of our road trip will open a new avenue for this blog. Our road trips are always an eating adventure as well, so stay tuned.
