Week 10, 2019 with Trim Healthy Mama
The menu plan for week 10 is extremely simple. It is during week 10 that I am cooking for two rather than three. I am utilizing several meals tucked away in the freezer that have been waiting for dinner for 2. I am also delighting in my new breakfast regime. I love the frozen pre packaged breakfasts for one. (the ‘Ole Buckeye routinely has cereal and berries). I am including two new breakfast shakes. On Sunday mornings I normally make a big breakfast after church. I have decided to include a quick shake before church to comply with THM guidelines. (I often skip Sunday breakfast and have only coffee).

Lately I have longed for flavored coffee creamer. It is definitely an indulgence from my past, that I thought I had overcome. After all I do enjoy black coffee. I went on a search for THM coffee creamers. I found one that I enjoy. Trim Healthy Mama Coffee Creamer
Initially I made the vanilla S version. Several mornings I added collagen. It is very good. The only problem was that drinking my coffee with an S creamer forced me into an S breakfast. This morning I made the fuel pull version of the creamer, subbing the full fat cream with sugar free almond milk. Yippee! Success. Now I can have my creamer and an E breakfast too!
Lunches for week 10 are fairly routine as well. I found a recipe for Creamy Tomato Soup that I can’t wait to try. I love preparing the soup recipes since they fully comply with my cook once/eat again philosophy. By the way, the roasted Cauliflower soup was awesome and it withstood the freezer as well.

I may adjust the tuna salad planned to make simply tuna and capers for an E lunch. I really enjoy the simplicity.

Dinner during week 10…what can I say. All but 2 are already prepared. Love it! I will pick up fresh Ahi on Friday when it is BOGO at Fresh Market. I am hoping the Fresh Market has ribs on sale next weekend as well (I missed the sale this past weekend.) If not I will substitute something else. We love the slow cooked ribs, so I will keep my fingers crossed. I prepared a meal for a family facing illness (meatball casserole parmesan). I made enough meatballs for their family as well as ours. Since most of my entrees are already prepared, I will spend some time doing further research on sides.

I will do a quick review of last weeks menus. We were invited to a dinner party on Saturday, so I eliminated the chicken and rice meal, leaving it in the freezer for a later date. The only other new recipe was the Hubby Lovin’ Chicken. I used breasts in the recipe and the chicken was dry. The recipe called for bone in chicken and if I make this again I will follow the suggestion and use bone in thighs. I am certain the chicken will be more successful. The “breading” was excellent. I will also revisit a Oven Chicken Kiev recipe that I have used over the years. I will tweak it to make it THM compliant.
So there we have it. I have a menu plan with very little fuss and the ultimate goal of cooking once and eating again. Bon Appetit.
