2020 Week 1 Menu Plan

2020 Week 1 has arrived and the planning has been implemented. I will admit that splurging on a variety of special festive foods over these past weeks has been delightful. So many holiday traditions include recipes that have been handed down over the years and sharing family favorites brings back so many memories. The menu plan for 2020 week 1 begins with more decadent treats, but then transitions back into a healthy eating plan. I am planning to return to the Trim Healthy Mama guidelines and follow them more strictly. 

Breakfast

Many of the breakfasts planned for week 1 are already prepared. As a result there is only one new recipe. The ‘Ole Buckeye loves scones and I prepared his favorite over the holidays. I would love to find a low carb scone that we both can enjoy while staying on plan. I will begin testing recipes this week.

Lunch

The lunch plan for week 1 will utilize several left overs including a new soup made from the stock of the smoked turkey carcass. The two new recipes will utilize a Costco rotisserie chicken. I plan to adapt both recipes to comply with THM.

Dinner

The dinners scheduled for week 1 are certainly not what I originally planned. Unfortunately I did not cancel my Blue Apron delivery and the box arrived on Tuesday. As a result the meals are not completely on plan, but I need to include and adapt the meals the best way possible. Friday the weather is forecast to be quite warm, perfect for grilling gourmet burgers. The rest of the meals are favorites which we have not had for quite some time.

Recap

I would be remiss if I didn’t recap the soup made from the broth of the smoked turkey. First of all, I would get a smoked turkey again if only for the delicious broth it makes. This recipe is delicious. The ‘Ole Buckeye has been fighting a sinus cold and this soup was a miracle worker.

Although the first menu plan of the year is not as “on plan” as I had hoped, it still looks to be healthy and enjoyable. I will plan future weeks to be more compliant. Here’e to a new year of great, healthy eating. Bon Appetit!
