2020 Week 2 Menu Plan
The menu plan for 2020 week 2 is being planned with the influence of a number of interesting new recipes from the THM blogs that I follow that promise to be cook once/eat twice offerings.
Breakfast
The breakfasts planned for 2002 week 2 are all repeats and all E meals with the exception of the power bowl. Whenever blackberries are on special I add them to the giant blueberry pancake recipe. We have found the mixed berries add an extra layer of flavor. The Bust-A-Myth cake is always welcome…not only at breakfast, but a great snack and dessert as well.
Lunch
The lunch plan for the week includes 2 new recipes from blogs that I follow. The soup sounds like an excellent winter meal and the salad with some adjustments sounds like a winner. I will rely on repeats for the rest of the week. Just an FYI…often we have dinner leftovers and serve them at lunch. The lunch plan changes. We can always transfer meals to next week…right?
Dinner
The dinner menu for 2020 week 2 includes meals that utilize my peppers and mushrooms fresh and needing to be used. Everything planned is a repeat of a family favorite. We do have a week of social activities, but I am anxious to eat well . I have shrimp and feta on hand and a real hunger for the Greek Shrimp that I love. I just wish I loved to clean the shrimp! Th repeat of meatza will satisfy my craving for pizza. Hopefully there will be enough leftovers to serve as cook once/eat twice meals next week.
Recap
My first attempt at a healthier scone was a success. The flavor was great, but the consistency was very crumby and not “biscuit-like”. However the ‘Ole Buckeye gave them a thumbs up. They were not as good as my buttermilk scones, but definitely a great healthy alternative.
The Bacon Ranch Casserole is a favorite of my daughter’s. The ‘Ole Buckeye enjoys it as well and this recipe has now replaced my tried and true Chicken Divan. I used the smoked turkey from our Christmas feast and the result was even more flavorful.
Two meals served last week were from Blue Apron. Both were quite tasty, however they were not on plan, nor were they made to serve three. I forgot to cancel the delivery, which I have done in the past. Today I decided to cancel my membership completely to avoid further mistakes. I really enjoyed these dinners early on, but if using a meal delivery service I must be certain it can feed three and is low carb/no sugar. Blue Apron no longer works for us.
Week 1 is a wrap and I am looking forward to the meals planned for 2020 Week 2. There has already been a modification. Bunco was cancelled due to lots of illness in East Beach. Some are dealing with the flu while others are dealing with what is being called “the crud” (sore throat, sinus congestion, and a lingering cough). In place of Bunco we had a cook once/eat twice repeat of the Bacon Ranch Casserole.
As we move ahead I am looking forward to the healthy meals planned. Bon Appetit.
