2020 Week 10 Menu Plan
The 2020 Week 10 Menu Plan is ready. It relies heavily on recipes from Trim Healthy Table, the second cookbook from the Trim Healthy Mamas.
Breakfast
The breakfasts on the 2020 week 10 menu plan will utilize veggie breakfast casserole left overs, a delicious pecan baked pancake that I have made in the past and a new caramel BAM cake. All of these are cook once/eat again meals and both of the cakes can serve as a dessert as well.

Lunch
The lunches planned for the week include eat again Cheapskate Soup, and two recipes from Trim Healthy Table. I have made the Hearty Lentil, Chicken Sausage, and Spinach Soup in the past and it was a definite success. The shake is a new recipe, but sounds delicious.

Dinner
There were several adjustments to the dinners during week 9. The weekly Costco run provided wild caught salmon, which took the place of the planned Greek pork chops. As a result I moved the chops to week 10. I also determined that the planned simple sesame chicken was not on plan. In its’ place I utilized leftover balsamic chicken from the freezer. I have made the taco salad and pot roast in the past…both favorites at our house. The new recipes are the Greek pork chops and the Hubby Lovin’ chicken, which receives great reviews from THM followers.

Recap
A new breakfast entree was this coconut breakfast bake. It was actually very tasty, but not a “satisfying” morning addition for the ‘Ole Buckeye. He preferred it as a dessert without the crumbled bacon.
The Veggie Breakfast Casserole was very filling and a definite cook once/eat twice offering. The only downside…I have several other breakfast casseroles that we like much more. This one will not be a repeat.
The main reason I added the Tex Mex Skillet to the menu plan was my constant search for E meals for dinner. This one didn’t make the cut. In fact we haven’t even eaten it for lunch. Another miss.
The biggest hit for the week was the Creamy Baked Asiago Chicken. I made a double batch of this recipe and delivered some to my daughter in law and the grand girls. This was a huge hit all around. A big plus…it is quick and easy to make.
I replaced one meal last week with wild salmon since it was available at Costco. When we have salmon it is the star and I prepare a simple side. Over the past months when we have eaten out, we have had wilted spinach several times and thoroughly enjoyed it. Luckily I found a new recipe that mimicked the flavors that we enjoyed.
It’s a Wrap
The 2020 week 10 menu plan is a mix of the old and the new. Although we don’t have a busy social calendar scheduled, our driving responsibilities with the grand girls has increased, making it even more important to have organized meal planning. It’s hard to believe that March has arrived. With it comes the spring season, advancing the clocks, and a heavy schedule of Varsity soccer to watch. Make ahead meals will be the key to staying on plan. I am looking forward to spring and continued healthy eating. Bon Appetit.
