2020 Week 12 Menu Plan
The 2020 Week 12 Menu Plan is complete recognizing that nearly all of the provisions are in house. Obviously at this point in time we are curtailing any unneeded or unwanted trips outside our home.
Breakfast
The breakfasts planned for 2020 week 12 feature only past favorites. I am also thinking ahead in the menu planning for the weekend. We plan to spend Friday through Sunday with the grand girls so that our son and daughter in law can celebrate their 20th wedding anniversary. (This will be the first time they have gone away to celebrate their special day and I am hoping it will happen for them.) Since I will be feeding four of us instead of two of us, I am planning breakfasts for those days accordingly. I can always make Greek eggs if the casseroles aren’t enough. The girls often request Greek eggs.

Lunch
Nothing new is planned for the lunches during 2020 week 12. I know that the chicken salad will feed the four of us over the weekend. The black bean soup can be supplemented with lean meat sandwiches. I may even reserve the frittata for later in the week and adjust the lunches for the ‘Ole Buckeye and me.
Dinner
Planning the dinners for the week turned out to be extremely easy. My daughter had signed up for 3 evening meals with Green Chef mainly because the blackened shrimp and cheesy grits was offered. In that delivery there will also be 2 additional meals, the taco salad and the meatloaves. All of the meals are Keto and fall within the THM guidelines. We were blessed that these meals were already on order. It saved a trip to the grocery store.
The weekend meals are grand daughter requests. They love the sausage macaroni and cheese and the Celebration soup (which is very similar to the zuppa Toscana soup that I make all the time. My daughter created the soup and the girls love it. Most likely I will prepare the Cheesy Southwestern Chicken Casserole for the ‘Ole Buckeye and me when the girls have the mac and cheese. We can use the casserole for lunch backup as well.

There were no new meals planned for the week. Everything was a repeat aside from one shake which was really good, but took me nearly all morning to sip.

I have decided that this lasagna could be eaten at least twice a month. We love it. Early on it was called white lazy lasagna, but I noticed that it has been renamed. I also made a casserole for the grand girls and they both texted a big thank you (which rarely happens). I am including the link with the new recipe name.
I seldom make desserts because I have experienced so many disappointments. Because I love lemon and have also been craving sweets I relented and made this keto lemon cake. OUTSTANDING. We were invited to my son’s for dinner so I took it along. It was a hit with everyone.
Once a year I make corned beef. Why is that? It is so good. We had this on Monday, since we ate at my son’s on Sunday. We really enjoyed it, but while we were eating it I remembered that the last time I made this recipe I added a bottle of Guinness in place of some of the water. I must remember to do it again next time. It added another layer of flavor.

In Conclusion
This past week brought a new reality to all of our lives. With changes nearly hourly and no knowledge of any certainty ahead we must be willing to be receptive. With all the uncertainty I find it makes it even more important to plan meals in advance. The last thing needed at this time is exposure to the outside world when there is no need. If I plan effectively it will alleviate grocery runs and keep things manageable. We will continue to adapt. We will strive to maintain our health by healthy eating choices as well as smart day to day living choices. Bon Appetit.
