2021 Week 9 Menu Plan
The 2021 week 9 menu plan is complete, although I no longer take the time or expend energy to plan snacks…they will remain unchanged. (Seldom do I snack.) In addition to eat again meals and family favorites, I have several new additions for both breakfast and lunch.
Breakfast
The new recipes for breakfast are both THM S meals, so I have rounded out the rest of the mornings with family favorite E meals, both of which are favorites with the recipes on past posts.

The lunch offerings include one of our favorites…very easy to make soup…cheapskate soup page 88 from the Trim Healthy Mama Cookbook. The new addition to the menu is the Chowder.

Dinner
I must admit that planning the dinner menu for 2021 week 9 was really simple. Luckily I had numerous left over entrees which will supply nearly half of the weeks meals. I have peppers that need to be used, thus fajitas have been added and Hubby Lovin’ Chicken is in the freezer. The only additional meals are pork tenderloin and salmon which are quick fixes. Actually it was interesting as I planned the week that I received an email from Allrecipes that included their 12 Best Pork Tenderloin Recipes. Consequently I added a new Burgundy Pork Tenderloin to try. After trying several new recipes for baked salmon, the ‘Ole Buckeye has requested that I stick with my tried and true, which by the way is ultra simple. I really need to add that recipe to the blog.
Hits
This may not be the very best soup I have ever made. However it was quite good and one of the quickest to prepare. In fact I made this for lunch in a blink of an eye when my son was stopping by. I will always keep these ingredients on hand for a last minute option for lunch or even a light dinner.
My daughter was going to be out of town for 10 days and it was my turn to cook, so I fixed one of her very favorite meals. She loves white chicken chili. We invited the 17 year old (and her new puppy, Tiller) to join us, because this makes a big batch of soup that it quite filling. For our special evening I made a new keto corn bread. Actually that is the name of the recipe, but corn bread it is not. However keto bread that is great with chili it was. What a great side and yet another family fav to add to our long list.
Last but not least for the successful recipes last week was a hearty dinner soup made in the INSTANT POT…yes, I did it! The instant pot was used for a quick busy day dinner and I actually accomplished it all by myself, except for a little assistance from the ‘Ole Buckeye with the lid.
Misses
Well this was a disappointment. As the ‘Ole Buckeye stated while he ate…We have lots of great chicken recipes and this doesn’t make the cut.” The chicken was tough and he did not like the mushrooms with the chicken. I was not a fan either…plus I have a splattered stove top, which is always a downer.
Last week was a great week of eating. Additionally it has provided many of the meals for 2021 week 9. I love cook once/eat again menu planning! I also achieved the goal of utilizing my Instant Pot as well as incorporating at least one E meal each day. The week ahead continues the goal of healthy eating and finding new and exciting recipes.
