2021 Week 32 Menu Plan

The 2021 week 32 menu plan is complete. I have returned to the basics of the Trim Healthy Mama eating plan. Aside from eat again meals all of the recipes will come from the Trim Healthy Mama Cookbook. Some are tried and true while others are new. I decided to stick to one source for a change to make for easy planning.

Since returning from my trip to Atlanta I have been fighting a sinus headache trying to prevent a sinus infection. I had hoped for a dinner celebration Tuesday , but the anniversary celebration will be postponed until I can truly enjoy a meal and an evening out!

Berry Cobbler

By slightly altering the ingredients I made this a plant based lunch and a THM E. This was quite spicy. In fact I mixed it with no fat yogurt to add protein and help with the heat.

One Skillet Mexican Quinoa

I make this often and mix the cheeses for different flavors. I decided to use up some broccoli and make a great lunch/maybe brunch for the ‘Ole Buckeye while I was gone.

Broccoli Cheddar Bacon Quiche

I liked this more than the ‘Ole Buckeye. It was mellow like comfort food for me. Not something I would have often but a good change.

As a meal…Not so much. As a salad topping, maybe. We had this initially with a last minute change in menu. I pulled enchiladas from the freezer and used the taco preparation over lettuce with cilatntro as a side for the enchiladas.

I was off for a 5 day trip to Atlanta.(hotlanta) with my grand daughter. I made several reservations to make the trip special. I tried to make healthy choices, but the trip was more important than the food choices. The ultimate goal was quality time together then came the eating and healthy choices….Bon Appetit.
