2021 Week 45 Menu Plan

The 2021 week 45 menu plan is complete. The week begins with meals at home concentrating on the utilization of perishables. We will be off again for a week in St Thomas at the Marriott Frenchman’s Cove, a timeshare villa complete with kitchen. Much of the menu plan will be centered around breakfasts and lunches prepared in the timeshare and most dinners exploring the local cuisine.

Breakfast

The 2021 week 45 breakfast plan will utilize the berries that I have and provide one pancake to be eaten and one to be frozen ready for our return home. The recipes planned for the timeshare require easily obtained groceries and will be cook once/eat twice meals. I have put the dry ingredients for the pancake in a zip lock bag to be packed for the trip.

Lunch

Lunches for the week include past favorites before we leave. The bean soup and Mexican Quinoa have been on the rotation in the past. If there are leftovers I will pop them into the freezer as well for our return home. I love having meals ready to eat after a trip. It has been difficult to plan lunches for the time share since we may be out and about during the day. The quesadillas are quick and easy with few ingredients and the taco casserole although a new recipe looks quick and easy as well.

Dinners for the beginning of the week will use up leftovers. We plan to eat several dinners out during our stay in St Thomas so I am opting to loosely plan meals and include recipes so that I have a back up plan for grocery shopping without over buying. It may require more grocery runs but more importantly offer more options once we are there. The chicken piccata and carbonara are aways a hit and I know the ingredients are easily found.

Breakfast made easy and serving many mornings is our family favorite sausage, cheese casserole. The recipe is made without the crescent rolls for our family, but for guests I often include the crescent rolls. It is a winner!

The Baked Caesar Chicken has become a family favorite and frequents the rotation. We enjoyed it once again this week and I decided to include the recipe link once again. This chicken is quick, easy, and delicious. It is easily entertainment worthy.

Our pork chops this time were a little disappointing. I love this recipe but the chops were too thin and ended up being tough. Lesson learned.

One of my favorite sides in the fall and winter is this acorn squash. It can be made as written or with butter, swerve brown sugar and maple extract. Yum!

Maple Roasted Acorn Squash

This soup is quick, easy and spicy. The ‘Ole Buckeye adds sour cream and I add Greek yogurt. Great for multi days of eating.

and Misses

I reviewed the 6 can chicken tortilla soup last week. I made it instead of this enchilada soup because it was quick and easy. It was also much better than the cheesy chicken enchilada soup. I revised this recipe by dropping the flour and using xantham gum as a thickener although the soup does not need to be thickened because of the cheese. We found this recipe to be bland and disappointing. Because it would serve several lunches I added additional spices hoping to make it more palatable.

I have spent way too much time trying to plan for our stay in the timeshare. Planning for four and not certain of food preferences is always difficult. We will concentrate on relaxing, enjoying the island and making our meals enjoyable without a lot of prep. We look forward to a great week and new memories. Bon Appetit!
