Menu Plan for Week 107 with Trim Healthy Mama
The menu plan for week 107 is really quite simple since we will be on the road again. It seems so strange that just one week ago my entire life seemed to revolve around Florence. It is almost unbelievable that the news and weather are still focused on the ravages that this horrific storm has dealt to the Carolinas. We were spared once again, but have come to the realization that a few hundred miles lay between their devastation and what could have been our’s. We have become much more mindful about decisions and preparedness. We have made more provisions for the future and determined additional ways of protecting ourselves and our property. We are truly humbled by our blessings these past days.
There were substantial changes to last weeks menu plan. The ramble was cancelled. We had the Carolina pulled pork on Saturday night instead and watched the OSU vs. TCU football game. I received a big thumbs up for the pulled pork as being quite authentic. Carolina Barbecued Pork
I had also forgotten that we were selected to be attendees for the Butcher’s Son Restaurant review on Monday. The Butcher’s Son
I dropped the skirt steak completely off the menu and will add it another time when grilling out is more favorable as far as the weather is concerned.
The dinners for week 107 will be mainly on the road. I hope to pack up some treats for the drive including some of the pulled pork that the “Ole Buckeye enjoyed so much. I will be experimenting with two new recipes, the spinach chicken casserole and the upside down pizza casserole.

I did try a new quiche last week that proved to be very enjoyable. A dear friend of mine gave me a handwritten recipe years ago for Chicken Quiche Almondine. I made the recipe but opted not to put it in a pie crust. I simply made the filling and put it in the pie pan to make it THM. I happen to love swiss cheese and this was very good. We enjoyed it for both brunch and lunch.
Last week did not prove to be momentous for cooking, but it did prove to be filled with important life lessons. I am glad that we will be taking a little road trip after being in storm preparedness mode. It will be a welcome change. It will also be a challenge, as eating on the road always is. Actually the eating out part isn’t the challenge, but staying on the THM plan while doing so definitely is.
