Menu Plan Week 111 with Trim Healthy Mama
The menu plan for week 111 has taken extra time to formulate. We are expecting out of town guests for the weekend, arriving Saturday and leaving Monday. Our friends from the Chicagoland area will be flying to Norfolk to look at a sailboat, hoping it will be suitable for extensive cruising. We are anxious to here about their future travel plans. Our long time friendship had it’s beginnings sailing on Lake Michigan and we have kept in touch over the years.
The biggest concern I have in planning meals is not knowing their food and beverage preferences. We have spent many social times with them, but not so many meals. In addition, I am uncertain of exact arrival and departure times on Saturday and Monday. We will be planning some sightseeing since this is their first trip to this area.
With all of this in mind, I have planned Saturday through Monday with ease of preparation as a priority. I plan to make several meals in advance. The freezer will take care of “keeping” meals in reserve. If we eat them…fine; if not, I will utilize them later. I am also fairly certain that we will enjoy at least one meal “out”.

I am utilizing several meals that are already tucked away in the freezer…the quiche, the soup, and the meatloaf. I plan to spend the end of the week preparing the chicken and lasagna. Hopefully the plan for week 111 will work out to be uncomplicated and successful. I will obviously need to fill in with sides and salads, but that will be totally dependent on the fresh specials this week.
I would like to quickly recap a few things from last week’s offerings. Week 110 meals. I have determined that this sheet pan recipe for Fajitas is my favorite…all time and my family agrees. The lime is a must. I also pop the sheet pans into the oven to heat up in advance (a trick I read recently). Served with low carb tortillas…Delish!

The crock pot beef and gravy received rave reviews as well. I served with mashed cauliflower and it was truly comfort food.
I made the Stupid Simple Zucchini Alfredo for the second time because we liked it so much the first time. I doubled the recipe, but unfortunately did not take the time to remove some of the water content from the zucchini. The sauce was too watery and not nearly as enjoyable this time. Note to self…extract moisture!
All of the beverages were extremely successful.
Now I am looking forward to sharing good times with old friends while staying true to the THM healthy eating plan. Bon Appetit’.
