Menu Plan Week 115 with Trim Healthy Mama
It’s that time again and the menu plan for week 115 is complete. The week ahead is perched directly ahead of the Thanksgiving Holiday and our road trip north to be with extended family. With that in mind and the fact that I have numerous leftovers, the menu is based on “cook once/eat again” offerings.
I will admit that several of the meals planned for the past week were not implemented. I invited my son’s family for dinner on Saturday, thus I juggled the menus. I served the fajitas along with chicken enchiladas on Saturday evening. I made enough for 7 of us, but the grand girls had plans and did not join us. That being said, I have enough of Saturday’s dinner left for at least 2 meals this week.
My breakfasts were on the fly last week, so I have reinstated the entire breakfast menu plan. I think I have stated in the past that I am not a breakfast eater. I seldom eat when I get up and postpone until later in the morning. At that point I often choose to eat what is most appealing, rather than what is on the menu. The ‘Ole Buckeye normally fends for himself, so breakfast is easy.
Week 114’s new breakfast recipes
The lunch plan for week 115 is strategic. I want to utilize as much of the remaining food in the refrigerator as possible. No new preparations here.
Dinner plans are easy breezy including lots of leftovers and taking advantage of the great sale on peppers at Kroger. That sale provided us with delicious Greek Salad, the best chicken fajitas I have yet to make, and the upcoming sausage and peppers.
I do plan to create a few food items to take on the trip…still to be determined. The ‘Ole Buckeye always complains when I pack the car…but he enjoys what is prepared on the long journey north. We are always well provisioned.
There was one new recipe from last week that I will share. The healthy chicken salad was very good. I will admit that the ‘Ole Buckeye raised his eyebrows at the first bite and said “Greek yogurt…right?” He would have preferred mayo. The salad can be a fuel pull without the grapes, but I added the grapes. I served in in shells of bib lettuce. Thoroughly enjoyable. (At least for me)

Since I am not cooking for the Thanksgiving Holiday, I have not made any special grocery shopping plans or a list of new recipes to try or to tweak. I have, however, begun to make a list of ideas for great eating over the Christmas holidays. I will begin sharing those ideas soon. In the meantime, here’s to a week of continued healthy eating with the Trim Healthy Mama guidelines. Bon Appetit’.
