Week 3, 2019, with Trim Healthy Mama
Week 3 has arrived and the menu plan is complete, but highly flexible. We may be taking care of the 14 year old over the weekend at her house as she continues her recuperation. They planned a family trip to join our son for a long weekend in Denver before her accident and they are hoping she gets an ok for travel from her doctor on Thursday. With that in mind, the menu plan reflects some of her favorites in case they are requested over the weekend.
The breakfast plan for week 3 is basically the plan from week 2. Week 2 Menu Plan The frittata and the pineapple oatmeal fed me the entire week aside from the eggs prepared over the weekend. I love it when I can prepare a recipe that goes such a long way, especially when I thoroughly enjoy eating it. Both of these recipes do just that. In fact I have frozen several individual servings of the frittata for the future. I have added only one new recipe…Mom’s Breakfast Casserole.
Mom’s Breakfast Casserole THM S
The lunches planned for week 3 revolve around all of the soups that were prepared for the Soup-per-Bowl. It turned out to just be three of us rather than the entire family, so we have enough soup to last the entire week. I have an entire week of lunches based on leftovers…how easy is that?
The dinners planned for week 3 include family favorites over the weekend since I may be cooking for our granddaughter. It might also be obvious that peppers were once again on sale since I have included fajitas and sausage and peppers. I am sure there will be a Greek salad as well since that is a favorite of the 14 year old.

There were several dinner changes last week. Since I made meatballs with a mushroom sauce for my son’s family, I decided to double the recipe and feed both his family and ours. I moved the Orange Chicken to this week. My daughter planned her Thai Coconut Soup so the “Taste of Home” Casserole was bumped completely.

Maple Roasted Acorn Squash adapted to THM by using Swerve Brown Sugar and Maple flavoring. WoW!
Pork Loin Roast with Honey Mustard and Herbs (adapted to THM Dijon Mustard and Brown Sugar Swerve in place of Honey Mustard.) THM S (A new recipe since the ‘Ole Buckeye cleaned the oven a few weeks ago and the Smoke Alarm Loin creates havoc in the oven.)
Cabbage with Leeks THM S I added nutritional yeast to this recipe.
Cranberry Pie THM S A family favorite.
Sausage Parmesan Cream Cheese Soup THM S I used my insta-pot! Delish.
Soup-per-Bowl Sunday…Zuppa Toscana, White Chicken Chili, and Sausage Creme Cheese Soup.
Superb Spinach Salad THM S I buy spinach in bulk from Costco and constantly look for fresh ways to use it. This was great.
We have enjoyed another week of healthy eating and I have next week mapped out. I continue to appreciate how much planning ahead allows me stay on track with healthy choices. It takes time, but as the week goes by I am always grateful that I have all I need on hand. I don’t need to come up with “What’s for dinner”. In addition by shopping specials and planning meals around weekly specials I am saving money and eating well!
