Vidalia Onion Casserole
Kroger had a sale on bulk vidalia onions a few weeks ago. I had pinned a recipe to “Looks Good Enough to Try” https://www.pinterest.com/carolhood2/looks-good-enough-to-try/ on Pinterest eons ago from Food.com. The images were not very appetizing, but the recipe had 5 star reviews as a “go to” side. I was making a pork roast for dinner and this sounded like a perfect accompaniment. Since I love swiss cheese, it couldn’t help but be a winner.
Well…not only did I prepare it then, I prepared it again last night to serve with pork chops. Not only is this a great recipe, but it received raves from the adults and the grand girls took multiple helpings.
A keeper!
- 7 Cups Chopped Vidalia Onions
- 1 Cup Cooked White Rice
- 1 1/2 Cups half and half
- 1 1/2 Cups Swiss Cheese Shredded
- 4 Tbsp butter
- Chop the onions uniformly and add to the butter in a skillet.
- Saute the onions until soft and translucent.
- Combine the cooked onions, the rice, the half and half, and the swiss cheese and transfer to a 9 X 13 baking dish.
- Bake at 350 degrees for 50 minutes.
This recipe can easily be made ahead and reheated. It is just as good if not better as a leftover. It makes a terrific accompaniment to pork, but would work well with poultry as well. Additionally, I see this as a make ahead side for the holiday table.
It is truly a keeper and fast becoming a family fav!
