Lu’s Scalloped Potatoes

Another of our Mom’s recipes.  Simple but durn tasty.  I have never seen another recipe for scalloped potatoes where the white sauce was simply made by layering the flour, butter and milk in the dish.  Try this.  You will not regret it.

A side comment: Mom had standard meals.  We knew that scalloped potatoes were served with ham and butter beans.  Actually, at that time ham was the larger part of the meal with the potatoes and butter beans as smaller sides.  I always loved the potatoes and beans the best.  Now, the meat is the condiment on the side….

Instructions
  1. Slice the potatoes pretty thinly. At home I use a mandoline to make them uniform. In the camper, I am using a knife...no big deal. Mom would have peeled the potatoes. I wash them well and leave the skins on.
  2. Put a layer of potatoes in a greased/buttered casserole.
  3. Sprinkle the potatoes with flour, salt and pepper to taste. Add about the same amount of butter as flour.
  4. Add more layers of potatoes, flour, butter, salt and pepper. Just put enough potatoes in each layer to hide the layer beneath. Not rocket science here!
  5. Once you have your layers pour in milk so that you begin to see it peeking from under the potatoes...just over halfway up the depth of the potato layers.
  6. Cover and bake at 375 degrees for about an hour. You want to put the casserole on a baking sheet to catch possible boil overs to save yourself an oven cleaning job. Just in case.
  7. Uncover the casserole for the last 15 minutes of baking to let it brown a bit. I also give it a gentle stir when I am removing the cover to mix in any flecks of flour that may not be incorporated.
  8. Serve. (Try to distract your family with other food being served so there is plenty of this for you. It is yummy rewarmed the next day too....maybe for breakfast before they wake up!

    Don’t let the images dissuade you! This is truly delish!
