Quick Tip – Soup Bone Substitute

I have a craving for homemade vegetable soup, which means it’s time to make stock.

I make my own beef, chicken and turkey stocks. Chicken and turkey are simple – just save the carcass from a roast bird, and cook it up with the right stock flavors and your done.

Beef stock had become increasingly frustrating as what they now call beef soup bones in the grocery are sad shadows of big, meaty bones my mom used to get from the butcher for a song – literally sometimes for free. But that was a long time ago.

Beef StockToday’s puny, meatless soup bones come at a porterhouse price, and with no meat. My solution? Beef ribs.

These huge ribs, which resemble something out of an episode of the Flintstones, can be bought on special for sub-hamburger prices (I’ve gotten them recently for $1.89/lb., compared to a soup bone at $3.99/lb with no meat). There’s plenty of meat and marrow on these big boys to make a great stock, and save you some coin in the progress.

      You might ask at your meat counter. Beef ribs may not be big sellers in your area, or they may be seasonal. Also, they might come in a rack that you could cut apart and freeze.
