2021 Week 14 Menu Plan

The 2021 week 14 menu plan is complete.

Breakfast

We have the luxury of several eat again breakfasts during the early part of the week. They will be followed by two of our favorite oatmeal preparations. The breakfasts will alternate both S and E meals.

Lunch

Lunches planned for 2021 week 14 will look familiar. During week 13 I had an incredibly painful tooth extraction and literally skipped lunches aside from the planned chocolate hazelnut shake. For the remainder of the week I ate cottage cheese or nothing. The ‘Ole Buckeye ate left over dinners including the Kung Pao Chicken. He also finished the corned beef in Rueben sandwiches. As a result the menu plan for week 14 includes the lunches planned last week. The recipes for those lunches can be found here.

Dinner

The beauty of a ham dinner for Easter is having it at least one additional evening and using the ham bone for Navy Bean Soup accompanied by my mom’s recipe for dumplings. Yum. The other meals planned are repeats of favorites. Nothing new this week.

It is obvious that I was not feeling my best last week…I took no pictures of the meals we enjoyed. 

Racheal Ray’s sheet plan dinner was a hit as always and fed us two separate evenings. Although off plan, this is definitely a family favorite.

Our Easter dinner was a family affair and made even more spectacular by the gorgeous warm sunny day. 

As an appetizer I served the hot feta dish, always enjoyed by everyone.

Two separate spinach salad recipes were combined for a delicious and refreshing salad that got rave reviews. I used the dressing from the first salad using avocado oil. I realized later that I completely forgot the cheese. It was still a great salad…but next time it will be even better.

My granddaughters were instrumental in planning the menu. Both of them requested potatoes. I made a huge casserole of scalloped potatoes. For those of us attempting to be lower carb, I tried a new recipe for cauliflower. It was great and went particularly well with the ham.

An additional side was also a new recipe…the caprese asparagus. I actually liked the cheesy asparagus better without the tomatoes…however I altered the recipe a bit by adding cold burrata to the top of the tomatoes. I should have baked it with the burrata on top to warm it. The cold contrast on a warm dish was not a good addition.

The main request of the grand girls was their new favorite dessert. Once again it was a huge hit. In fact the 17 year old had 3 helpings!

Misses

The one and only disappointment last week was the shake. Although I love hazelnut…this was a miss. It did fit the bill for a patient recovering from a tooth extraction, but it will not be repeated.

Recap

I will admit that eating was not enjoyable for me last week. In fact it will continue to be difficult in the week ahead. When I don’t feel like eating, I also don’t feel like cooking. For that very reason I have created a menu that will be easily managed, while still enjoyable to eat. No intense cooking for now…I am relying on favorites not venturing into unknown territory. That being said, we will continue to to eat healthy satisfying meals. Bon Appetit.
