2023 Week 49 Menu Plan

The 2023 week 49 menu plan is complete. Because I am traveling over the weekend and we have several lunches and dinners out, the plan is very basic and simple. The ‘Ole Buckeye will have a supply of leftovers for each meal while I am away.

Breakfast

I have a large maple pecan baked oatmeal that should last the week since I don’t eat breakfast. However I will prepare some overnight oats to be certain that there is enough prepared and available for the ‘Ole Buckeye for the week.

Both of these recipes are tried and true. The crisp is awesome as a dessert as well.

Maple Pecan Baked Oatmeal

Although this was not my most favorite soup ever…it did the trick with utilizing my dark meat turkey leftovers. Why the recipe successes rice or mashed potatoes I will never know…we enjoyed it as a cook once/eat again soup.

Left Over Turkey Chili

I bought Swiss Chard at the Williamsburg farmers’ market and prepared both of these recipes when we returned home. I wouldn’t repeat the first, but the salad was delicious.

Sautéed Swiss Chard and Butternut Squash

I used this recipe as a guide. I had my own homemade honey/dijon dressing on hand, so I used it in place of the dressing in the recipe. The salad was very good as well as healthy.

Cooking over the holidays is always a challenge. With social events and limited time meals seem to be poorly executed at the last minute. This last minute weekend trip will really cut into my organization as I plan for the family Christmas trip to the timeshare in St. Thomas. I always preplan meals for that experience to assist with grocery shopping and as little time in the kitchen as possible. The days progress and the busy-ness of the holidays continues. Bon Appetit!
