Menu Plan Week 59 featuring Trim Healthy Mama

The menu plan for week 59 is ready to go.  It will feature dinners comprised of nearly all cook once/eat twice entrees.  One new recipe is featured as well as a tried and true.  Bobby Flay’s Roasted Vegetable Meatloaf is a family favorite but I intend to tweak the recipe in hopes of making it more Trim Healthy Mama friendly.  Since nearly all of the dinner entrees are repeats, I have dedicated the selection of new recipes to breakfasts and lunches.

Breakfasts feature more S recipes than usual.  I have a feeling that as the mornings arrive I may decide on something lighter.  I continue to find that breakfast and lunch tend to be in flux depending on my appetite.   I adapt my lunches in particular.  Often I incorporate leftovers from an evening meal if not enough remains to satisfy the two of us for an additional dinner.

Once again I am linking all the the new recipes that are on the plan.  That way you can try them along with me if you wish.  I will continue to post the hits and misses as the journey continues.

Lunches for week 59 will be slightly more complicated than usual and several will be featured more than once. Two of the new recipes have caught my attention for several weeks, so I am anxious to give them a go.

Week 59 appears to be a great mix of new recipes.  Hopefully they will be enjoyable enough to cook once and eat twice.  If not I will be in trouble.

Now for the Hits and Misses from Week 58

Upside Down Peach Oatmeal Bake

 

This is the second time I have made this dish.  Both the ‘Ole Buckeye and I really enjoy it and it will feed us for at least 3 mornings if we are both eating it.  I use fresh peaches since they are in season, super sweet blend from THM instead of Xylitol, and the last few servings I used Trader Joe’s Coconut Cream in place of yogurt or almond milk as a topping.  Delish.

Blueberry Baked Oatmeal

Well, all I can say about this oatmeal is Yum,Yum! and I’m not even a blueberry fan.  I loved that I could pop it into the oven on Sunday morning and we could have a hot breakfast before church!  Once again I spooned some coconut cream over the top…the ‘Ole Buckeye ate it without any topping.  By the way, he is the one that finished his second bowl and said Yum, Yum.

Broccoli Salad

You must understand that I normally make my Mom’s broccoli salad.  I made this THM rendition as a side for our Buckeye Burger Bash.  The only change I made to the recipe was putting the seeds on the side to be added to each serving, keeping the crunch.  I also subbed Greek yogurt for the sour cream.  Very good and kept well to be used later for lunches.

One Pot Unstuffed Cabbage Rolls

I think I enjoyed this cabbage dinner more than the ‘Ole Buckeye.  I thought it tasted very much like my tried and true cabbage roll recipe, but it was oh so much easier.  I cut the cabbage into thin slices…his reaction, too hard to eat.  Next time I will cut the pieces of cabbage smaller.  I subbed brown sugar with a THM friendly brown sugar. Brown Sugar Replacement

Pepperoni Pizza Chicken Bake

Well this was yet another new winning recipe.  It was easy to put together and truly satisfied all the longings that I have had recently for pizza.  I served this with a Mario Batelli Italian broccoli dish (unsuccessful) and a kale salad.  Success.

Meatball Parm Casserole

OMG…these were soooo good!  I had planned to have this casserole as an entree for us on Tuesday, but our son’s family invited us over for grilled pizza in his Big Green Egg on Sunday joining long time friends visiting for the holiday weekend. Since I knew pizza was not in my eating plan, I elected to make the Meatball Parm Casserole to share, but mainly so that I had something to eat.  I must admit that I did have a small sliver of pizza, not to be polite, but because I just wanted to appease my cravings.  I really didn’t miss having pizza for dinner though, because these meatballs were so delicious.  In fact the grand girls wanted me to leave the leftovers…they loved them.  KEEPER.

Mississippi Pot Roast

This crock pot meal is a family favorite and once again we thoroughly enjoyed it.  I served it with mashed cauliflower and roasted broccoli.

Low Carb Pumpkin Bars

Because we were celebrating a holiday, I made dessert.  I will admit that most low carb sugar free desserts do not appeal to me.   This was just ok.  I have decided to roast pecans and chop them and dust the icing with the nuts to add some flavor.

So there you have it.  I have a menu plan for week 59 and a review to the hits and misses from week 58.  I am gradually adopting the THM eating plan, loosing weight and inches and truly enjoying what I eat, as are those who are eating the meals as well.  It is truly wonderful to adopt a healthy eating plan and not feel deprived.

    We also had the Meatball Parmesan this week. It was a hit here also. I need to blog soon about a couple of THM recipes that we particularly like. Someone needs to crank me up!
