Meal Plan Week #14 (1)

Another week, another meal plan….or not.  My plan this week is to do as little cooking as possible.  I have leftovers and  quick fixes, so I am going to attempt to do minor kitchen duties.

Monday:  Left Over Mother’s Day Dinner  (Ribs, Grilled Vegetables, Cheese Grits, and Pasta Salad)  We are eating late. The 6th Grader has a Track Meet.  (For the past few weeks our track meet meals have been close to 9PM).  Fashionable in Europe…not so much in Virginia on a school night!

Tuesday:  Chicken  Dijonnaise (Left Over)

Wednesday:  Bobby Flay’s Southwest Meat Loaf and Sweet Potatoes  Family night and a family favorite!

Thursday:  Chicken Enchiladas, and the remaining fajitas  (Left Over)

Friday:  Hot Browns  (Quick and Easy because the Norfolk Middle School Track Championship is scheduled)

Saturday:  Smoked Sausage and Home Fries  Another quick and easy staple because we have 3 soccer games scheduled on Saturday and one on Sunday.  This is also a favorite of the ‘Ole Buckeye.

Sunday: Beef Enchiladas  (Because I only made chicken enchiladas on Cinco de Mayo) and beef are the ‘Ole Buckeyes favorite.  A recipe from his mom’s kitchen.

It is scheduled to be a busy, rainy week and I am not feeling very creative.  I used most of my creativity on Saturday for the Derby Party!  Watch for that post upcoming…it was GREAT fun).

Maybe by midweek I will get a spark, but for now I don’t even need to go to the grocery Tuesday.  Did I ever mention that I am not a fan of grocery shopping???
