Shortcut: Slow Cooker “Refried” Beans

Shortcuts are important to most of us.  In the summer around here, they are not needed as often as they are Fall through Spring.  Because then there is school and there is HOCKEY!  Hockey, hockey and more hockey!!!!

Currently there is hockey practice for one or both boys four evenings during the school week, hockey practice on Saturday and Sunday mornings, and games Saturday and Sunday afternoons and/or evenings.

We eat, sleep and breath hockey.  (Actually “breathing” hockey is true…you have not lived until you smell the scent of sweaty hockey gear…and the boys have not yet added the teenage boy funk to the mix!  Nonetheless, the topic for another blog:  How to clean hockey gear.

But, back to the Shortcut of the day:  Refried Beans.

Yep, the shortest cut is to just buy cans of refried beans.  Done.  If you want to be a bit healthier, buy the lowfat/nonfat kinds.  Even our allergy prone guy can eat them. BUT, if you want a lot of yummy healthy beans for very little money and almost no work…try this shortcut.

  1. Put all ingredients in the slow cooker.
  2. Cook on high for 8 hours. Drain, reserving liquid.
  3. Mash with potato masher if you like them to show some bean pieces. Add reserved liquid as needed to get the consistency you want. Whiz them in a food processor if you like the consistency of canned beans.
