The 2021 Week 6 Menu Plan is complete with very little planned experimentation, but lots of savory soups both at lunch and dinner. Valentine’s Day calls for a celebration as well.
Breakfast
I made a new recipe for oatmeal zucchini muffins last weekend (recipe on the THM Membership site) and they will be enjoyed several mornings this week. I have a new recipe for sausage biscuits which sounds really yummy. Along with the ‘Ole Buckeye’s favorite morning feast of bacon and eggs, I hope to prepare keto cinnamon rolls for a Valentine’s treat.

Lunch
The staple for winter lunches has been soups, not only for warmth and satisfaction, but even more so for convenience since they are a cook once, eat several times depending on the recipe. This is the area where I have been doing the bulk of my experimentation lately, trying many new recipes.
Dinner
The 2021 week 5 dinner plans are all family favorites with the exception of an Instant Pot Tuscan Soup. Valentine’s Day will feature seared ribeye steaks with some creative sides. I am not certain what I will come up with for dessert, needless to say Valentine’s Day requires a dessert…right?
Hits and Misses
The bulk of last weeks meals were successes we have had in the past. The new recipes were quite successful. The taco crunch salad (without chips…because I cannot find “baked” blue chips) was great and enjoyable on the second day as well.
Our family favorite spaghetti squash was enjoyed once again.
Million Dollar Spaghetti Squash
The menu for Super Bowl Sunday was super as well. I have made the pizza in the past…but distant past. Very enjoyable.
The biggest surprise for the evening was the pizza salad. It was like having a high end antipasto appetizer. Fabulous. I did not put it together as a huge salad, but as suggested we put the topping onto the lettuce greens individually. That makes it a perfect salad to make once and eat again. Definitely rotation worthy.
Recap
Weekly menus have evolved once again from preparing for 3 (frequently including my daughter) to more often eating for 2. It will take some time to recalibrate my thinking and preparations. Initially I am finding that I have way more leftovers and way less need for grocery runs. More often than not my meals are so plentiful that my menu plan shifts some meals forward to the next week. 2021 week 5 looks particularly enticing. Bon Appetit!
