Week 21, 2019 with Trim Healthy Mama

To plan for week 21, I will reach onto my pinterest boards (Next Week, Menu Plans, and It Looks Good Enough to Try) and the Trim Healthy Mama Cookbooks for inspiration. The weekly grocery specials are not helpful at all in determining this week’s fare. I guess after all the great reductions for the 4th of July holiday weekend, my grocers decided to cut back on good offers.

Breakfast

My plan for breakfasts during week 21 includes only two new recipes. I am interested in incorporating a few new FP meals during the week, as well as including more E meals. Since the E meals are not a favorite of the ‘Ole Buckeye, I am slowing introducing more into his diet by including his favorites. He is a huge fan of the BAM Cake plus I have ripe bananas ready to use.

Lunch

The lunches planned for week 21 are all repeats that have been enjoyed in the past…several are individually packaged in the freezer, while others will be repeated at lunch after being enjoyed at dinner. I will make the Peanut Butter Cup Shake as a FP for me and an S lunch for the ‘Ole Buckeye.

Dinner

None of the dinners planned for week 21 are new. Several are already prepared, so it should prove to be an easy week of cooking. It has been some time since I have made the chili, but Lidl had a great price on chicken thighs and even though we are in the heat of summer, it sounds so good!

Breakfast Recap

I can only make two comments here. The first comment is that the ‘Ole Buckeye really enjoys oatmeal, although he normally layers it with brown sugar, nuts, and dried fruit. Secondly, he is not a fan of chocolate. I initially planned to make this one serving oatmeal just for me, but he opted to try it as well. Surprise, he liked it, he really like it.

I have added yet another E breakfast to my worth a repeat category. The apples that I had on hand were fairly sweet. The next time I make this I plan to use a tart apple. I think that would make it even more enjoyable.

This yogurt has been a standby for me ever since my THM journey began. The ‘Ole Buckeye is not a Greek Yogurt lover. (He likes the sweet stuff). He has been converted. Now he actually asks for the Power Bowl. This time when I reread the recipe I noticed that she occasionally heats the berries and makes a syrup. Since my strawberries were past prime, I tried heating them. Very good and it made the strawberries much more enjoyable than they would have been.

Family Dinner

Our Monday night dinner became a family dinner. We continued with the menu as planned since there was enough Jalapeño Chicken to serve once again. I was assigned to make roasted broccoli and a Keto bread. I also made the appetizer for happy hour.

OK, I grew up on my mom’s homemade Pimento Cheese which is excellent, but not THM compliant. After being in Charleston and varies eateries in the South I have looked for a great recipe. This is it. I did not have Monterey Jack Cheese, so I subbed Pepper Jack Cheese. This is stellar. My son even asked for the recipe.

I was supposed to have these for breakfast before church on Sunday, but never got around to making them. I made them on Monday. We had a family dinner Monday night, (left over Jalapeño Chicken) and I had the assignment for a side and a bread. Since I made the muffins late in the day, I decided to serve them for dessert. They were like having a cupcake. I have since had one for breakfast and it is very coffee cake like. Very good, but expensive to make.

The other new recipe I tried for the family dinner was this “Corn Bread”. Although I didn’t find that it tasted like traditional corn bread, it was a great accompaniment our dinner and would be great with several meal types. Again…another winner.

I am always looking for great sides and salads. I served this new sweet pepper salad for several lunches and dinners last week. What can I say…5 stars! This salad is easy, refreshing and would be a perfect accompaniment to almost any meal. My captive audience loved it and would have added even more fennel. This is a keeper!

Concluding

I have said it all. We have completed one week and begin week 21. I learn more every day, and continue to follow the THM plan. The ‘Ole Buckeye has become much more disciplined, and I am trying to get better about making enough for two at every meal. Here’s to another week of healthy eating. Bon Appetit!
