The menu plan for week 11 combines both new recipes and favorites. I continue to surprise all of us with some of the new recipes. We have enjoyed many of them and I have made believers out of my cynical family. They have encouraged me to stick with tried and true, but I continue to be more adventurous.
The breakfast plan for week 11 is laden with leftovers. The only new recipes will be the banana blueberry pancakes and the breakfast swirl. I am making a batch of breakfast cookies, most of which will hit the freezer in preparation for an upcoming road trip.

The only new dinner planned for week 11 comes at the end of the week. During the month of April Rachael Ray is being featured on the Food Network everyday at noon with 30 Minute Meals. I watched the first episode and maybe because I have a craving for pizza, the Chicken Patty Parm sounded really good. I just have to give it a try!

I would be remiss if I did not include a review of last week’s successes, there were many.
Caramel Apple Bam Cake page 384 Trim Healthy Table. I really like the original BAM cake, but this one is really good as well. In fact it is a great E dessert as well as a satisfying breakfast.
Sugar Free Coffee Creamer THM FP This is yet another new creamer that I have added. It is like drinking a bullet coffee. I am not a fan of bullet coffee, but I do like this, especially since it is a fuel pull.
Sausage Ricotta Breakfast Casserole THM S Occasionally I find a new recipe that catches my eye because I have ingredients that need to be used. I have a large tub of ricotta in the refrigerator from Costco with quite a bit left. This recipe looked intriguing, however I made modifications after ready some of the comments. Since I was using it for brunch I substituted breakfast sausage (1 pound). The ‘Ole Buckeye gave it rave reviews…top 5 in his breakfast casseroles. This would make a great lunch or dinner as well using the Italian sausage as written. I do think that 2 1/2 pounds of sausage would be overkill.
Turtle Cheesecake Shake THM S All I can say is Yum!
Garlic Mushrooms THM S This is an excellent side and works well with a variety of meals. I made it because I had mushrooms that needed to be used (sliced rather than whole). Very pleased with this addition.
Roasted Green Beans THM S Love these, in fact I have made them twice in the past week. Lidl had their French green beans on sale this week. I enjoyed the beans so much that I returned to Lidl to get more. For me it was almost like have French fries…maybe a stretch, but I thoroughly enjoyed them.
As I begin yet another meal plan, I realize that the time it takes to plan, research, and prepare is definitely worth the effort. I don’t always stick to the plan because schedules and plans change, but on the whole, I have come to rely on the way this organizes not only what we eat but also how often we shop. I look forward to another week of great eating. Bon Appetit!
