When I served the Carolina Pulled Pork, I knew it should be paired with cole slaw. After all this is a southern tradition. Since I had cabbage, carrots and Marzetti’s Original Cole Slaw dressing in the refrigerator, I was all set. This may sound too easy to be good, but believe me, the level of difficulty does not affect flavor or enjoyment whatsoever.
I use the food processor to shred the cabbage and the carrots, so making the slaw takes literally no time at all.
Ingredients
- 3/4 Head Medium Cabbage
- 6 Carrots
- 1/2 Jar Marzetti Original Cole Slaw Dressing
- 1/2 cup Raisins
- 1 Tbsp. Celery Seed
Servings: People
Instructions
- Remove the core of the cabbage and cut it into wedges small enough to put into the feeding tube of the food processor. Shred 3/4 of a medium cabbage.
- Peel the carrots. Place in the feeding tube of the food processor and grate the carrots.
- Put the grated carrots and cabbage into a large bowl. Add about a cup of dressing and mix well. Add additional dressing until the slaw is dressed and a creamy texture. Fold in the raisins and the celery seed. Chill and serve as a side or as a condiment on your pulled pork.
Recipe Notes
As an aside. I have made my own homemade dressing for cole slaw, but when I want a creamy dressing the Marzetti is as good if not better than homemade.
