2024 Week 10 Menu Plan

The 2024 week 10 menu plan will look quite familiar to week 9. In fact half of the meal plans will be reinstated this week. The ‘Ole Buckeye was called out of town at the last minute and did not return until late Sunday night.During his absence, I had a perfect excuse to create “meals for one” using leftovers. Thus my refrigerator and pantry remain full of ingredients waiting to be prepared.

BREAKFAST

I added 2 additional recipes to the breakfast offerings as well as a protein shake for either breakfast on the run or a between meal snack.

Cottage Cheese Egg Bake

Berry Chia Seed Pudding

Giant Blueberry Pancake

Tex Mex Frittata

Cottage Cheese Protein Shake

LUNCH

The plan for lunch is a complete rehash of last week’s menu plan. There is no need to change things since I have all ingredients on hand.

Egg Roll in a Bowl

Farro Salad

Keto Sloppy Joes

Sicilian Cauliflower Salad

White Bean and Barley Salad

DINNER

I have added a few meals to last week’s plan. It is most likely more than we will eat, but I will be prepared. It looks to be a fairly disjointed but it is what it is. At least we will be eating a variety interesting new meals and several old favorites.

Black Pepper Stir Fried Udon

Keto Chicken Pad Thai

Ina’s Summer Garden Pasta

Sun Dried Tomato, Basil Balsamic Bucatini

Pasta Puttanesca

Greek Style Spinach Feta Polenta Pie

Hits and Misses

I love a good overnight oatmeal or chia pudding to have available on a busy morning. This one has more protein than most. The ‘Ole Buckeye prefers walnuts over pecans but the beauty of this recipe is that you can add the topping that you enjoy most.

Blueberry Pecan Chia Seed Pudding

If you love olives like my family does this salad will be a keeper. I opted to successfully use chickpea orzo and served it the first time for a family lunch. Delicious and easily enjoyed for several additional meals. I have had mixed reviews when using chickpea pastas in the past, but for this salad it was a healthy winner.

Mediterranen Orzo Salad

This recipe ia an adaptation of mine from a recipe my sister sent me years ago. It is full of flavor and an all time favorite.

Greek Turkey Burgers

Meatballs are a favorite and I am always looking for new options. We love Greek food and these meatballs have great flavor. They were quick and easy to prepare as well as being oven roasted which I always appreciate. (I am not a lover of browning meatballs on the stovetop.) We used Greek yogurt as a dipping sauce. An added bonus…healthier ground chicken.

Recap

Two weeks and basically one menu plan…all of that and a late post. Life has strange way of getting out of control. As the need for nourishment continues and there is a decision not to rely on fast food during stressful times a healthy meal plan is necessary. The journey continues. Bon Appetit!
