2022 Week 20 Menu Plan

The 2022 week 20 menu plan is complete and if it looks similar to last week, that’s because it is!

Breakfast

The breakfasts planned for 2022 week 20 are basically a repeat of last week. As it turns out, I fasted most of the mornings of week 19 and the ‘Ole Buckeye finished up breakfast muffins and cookies still housed in the refrigerator. I do have one new recipe planned for the week ahead using tofu, which will be a significant experiment in our household! Tofu has never been incorporated into any of our meals and has seldom been eaten at all.

Lunch

The only thing that I can say about the lunch plan for the week is the soup! The soup recipes from week 19 made an abundant quantity, most of which will be finished over the course of the week ahead. Often when I make soup it either feeds us 1 or 2 meals or on the opposite end seems to be a bottomless pit. For that reason, we have lots of “eat again” lunches planned. The only new recipe (Quinoa soup) was originally planned several weeks ago.

Dinner

We have several leftovers and rather than using them for a lunch, I will add a significant salad and we will have them for dinner. Since we have several soccer games beginning at 5:30 PM this week, it is quite beneficial to have easily reheated meals already prepared. I plan a repeat the Quinoa recipe we have had in the distant past and I have also included a Fettuccine recipe as a backup.

Hit and Misses

If fresh mangos had not been on sale last week, I would not have found or tried this recipe. That would have been a huge mistake. Love this flavorful oatmeal. It was easily made in the microwave. Delish!

Tropical Oatmeal

This soup/stew was rather bland. It was good, but we have come to the conclusion that a little heat is important, especially in a bean soup. I used dried beans so it took 2 days of slow cooking in the crockpot after soaking to soften the beans. This is a very economical recipe and will feed us more lunches than originally anticipated. Next time, I will spice it up more.

Black Bean Stew

I will admit…this recipe seemed like a stretch. As I prepared to serve it the ‘Ole Buckeye rolled his eye…twice! But you know what? This was delicious! My daughter brought us a fresh loaf of homemade whole wheat bread which we had with it so the meal was quite filling. Both of us loved the sauce and I must admit…I did not miss the chicken! A keeper.

Kung Pao Cauliflower

This meatless meal we have had in the past and once again we found it to be filling and enjoyable.

This new focaccia recipe was not as successful as I had hoped, but that may have been due to errors on my end, rather than the recipe itself.

Recap

The emphasis on the knowledge of a plant-based dietary goal continues. We will not forgo animal and dairy products completely but will be focused on the inclusion of many more plants. The journey continues not only for our health but for our enjoyment as well. Bon Appetit!
