The 2022 week 16 menu plan is complete and ready to go! After a successful weekend of cooking for our family Easter dinner I am ready for a few days of ease in the kitchen. Luckily I have several “eat again” meals planned.
Breakfast
Nothing new is planned for breakfast except the dark chocolate shake. In fact I was so enthralled with this post using cottage cheese in a variety of ways that I am hoping to incorporate some of those in future meal plans.

I don’t know what we had for lunch last week, but most of the meals I planned were not executed. I did make the Cowboy Grub, but it remains in the refrigerator ready for several meals this week. It is quite spicy so I add a little fat free Greek yogurt.

Dinner
The dinner plan for 2022 week 16 is a breeze early in the week because everything is already prepared. The only new recipe planned is the Greek chicken. I love Greek and I love sheet pan meals so I am excited to try this one.
Hits and Misses
Lots of hits this week!
We are always up for a new egg casserole. I was actually surprised that I had never given this one a try out of the Trim Healthy Mama Cookbook.
THM Breakfast Casserole
I seldom make pancakes because they take forever and it seems like low carb pancakes take even longer. I treated the ‘Ole Buckeye to these Easter morning. He kept eating and eating, and eating.
And to think…the only reason I made this soup was because I needed to utilize some old cabbage. As it turns out this is one of the best soups I have made in a long time. The ‘Ole Buckeye loved it as well. Big plus…it’s a slow cooker meal!
At the last minute last week my son joined us for dinner. I made a beef enchilada recipe handed down by my mother in law and a new cauliflower rice. It’s a keeper. It could actually be a main course.
Easter Dinner
This is a new appetizer that I found and it was a huge hit. I took a picture before baking it and adding the burrata. I forgot to take one of the completed dish and it was gone in a flash.
Garlic Herb Roasted Olives with Burrata
This salad is so easy and so delish. The entire family loves it.
As far as I’m concerned this is the ultimate zucchini casserole. The grand girls raved!
Baked Cheesy Zucchini Casserole
Yet another favorite. So quick and easy and a perfect accompaniment to the ham. I make mine with Lakanto maple flavored syrup and the others according to the recipe.
How in the world did I forget to get a picture of the finished piece de resistance carrot cake? Luckily I got a shot in process. I have my very own secret ingredient to this recipe, but if I told you I would have to kill you.
Recap
Week 15 proved to be a great week of eating, especially sharing meals with family. There were many changes however so meals move to this week. Obviously I have lots of ingredients on hand. Once again we are primed and ready for a week of good eating. Bon Appetit!
