2022 Week 13 Menu Plan

The 2022 week 13 Menu Plan is complete! We have a Green Chef delivery this week that my daughter arranged which will supply 2 evening meals. Very few new recipes are planned. I am relying on past favorites and cook once/eat again offerings.

Breakfast

I have both giant berry pancake and Tex Mex Frittata leftover from last week. I am planning only one new recipe featuring turkey breakfast sausage. It has a base of crescent rolls, which I will forego to make it compliant and low carb.

Lunch

The 2022 week 13 lunch plan once again includes soups. I have become quite dependent on the ease of heating up a quick lunch after the initial preparation. Regardless of what errands we run or activities we have, lunch is always available for a quick reheat.

Dinner

Green Chef will be the star of the week thanks to my daughter. We share cooking and often she orders from Green Chef. To be perfectly honest we have had a variety of meals all of which aside from one have been very enjoyable. She loves the service because she can order keto and does not to need to do the grocery shopping or the planning.

Hits and Misses

Always a breakfast/brunch favorite this frittata never fails to please. I always omit the potatoes and occasionally add something new because I have it on hand. This week I added shishito peppers left after an appetizer snack during the basketball tournament games. Delish!

Tex Mex Frittata

I tried two new soups, both THM E recipes. They were both “fine” but not worth putting on the rotation.

Italian White Bean and Spinach Soup

Slow Cooker Quinoa Minestrone

Shishito peppers were available at Trader Joes I purchased them on a whim. I sautéed them as an appetizer while watching one of the sweet 16 games. I used a little too much olive oil, but they were tasty, I finished them off in the frittata giving it great flavor.

Now for the winner of the week….at least my daughter and I loved these. The ‘Ole Buckeye was not as enthusiastic. The sauce was absolutely excellent. The recipe did not make enough meatballs and needs to be doubled in the future. I will also investigate more ways to utilize this sauce. Yum.

Recap

Last week wasn’t the most exciting but I do have one new recipe that I will continue to adapt. Sometimes new sauces or new ways of preparing foods are more exciting than a full week of eating. The excitement of food discovery continues! Bon Appetit!
