The 2022 week 12 menu plan is complete. Above all it is filled with a variety of new untried recipes.
Breakfast
There are no surprises at breakfast. I supplied savory treats for our Garden Club meeting last week and both the sausage muffins and meatballs are leftovers from the meeting. The giant berry pancake and Tex Mex Frittata are long time favorites.

The 2022 week 12 lunches rely heavily once again on soups. Two new ones are scheduled and look to provide us with several meals.

Dinner
The dinner plan will recreate our St Patrick’s dinner into an interesting new casserole. In addition I plan a new meatball creation. I am always looking for great meatball recipes.

Shepherd’s Pie is a great recipe from the newest THM cookbook. Trim Healthy Future which we totally enjoyed in the past. The chicken enchiladas are a family favorite found in the Benington Family Cookbook.
Hits and Misses
I don’t know about anyone else, but my onions seem to go bad way more quickly than in the past. Since I had plenty on hand I decided to try this new chicken recipe. Although it was ‘fine’. It is seldom that I repeat a recipe that is simply fine.
Recap
For some reason it has more difficult to plan my menus. Part of the problem is finding fewer and fewer good sales at the grocery stores. Normally the specials offered inspire a meal. That has not been the case these past weeks. I am also very set on cook once/eat again meals, not only to stretch the budget but also to reduce time in the kitchen. I do find that I am spending more time and effort on cost effective planning. That being said, we do continue to eat healthy satisfying meals. The adventure in eating continues. Bon Appetit!
