The 2021 week 8 menu plan is complete. This week’s plan is filled with “leftovers” and favorites with only three new recipes in the mix.
Breakfast
Included in the breakfast plan are breakfast rolls left over from last week, breakfast cookies from the freezer and BAM cake which is always a family favorite.
Lunch
I continue to have a refrigerator full of soups of varied varieties and amounts which must be finished. Ultimately I will end the week with a spicy bean soup which has been on the menu in the past, but never made it to the table.
Dinner
Two new recipes are planned for the week. First is the Alice Spring’s Chicken which is a copy cat of a top selling dish at The Outback restaurant. In addition is the Tuscan Soup which is yet another recipe planned in the past, but never making it to our table. The rest of the week is filled with leftovers with a splurge of steak on Sunday.

Hits
We have another breakfast hit. In fact it ranks right up there with the white cheddar sausage biscuits from last week. We are definitely on a roll. In fact I could rotate our favorite breakfasts and not bother looking for more. (not happening). I did not make the gravy…not necessary.
I have made this country chicken Kiev for years. In fact it is in our family cookbook. The attached recipe is the closest one I could find that mirrors the one that I make. Ultimately I have made revisions by using only parmesan cheese and no panko or bread crumbs. However there is enough difference in the two recipes that I will need to add my rendition to the blog.
Misses
The only reason I made this soup was because I had red lentils on hand. Unfortunately I kept forgetting to soak the lentils over night. Finally it is made and will be finished over the course of 2021 week 8. This recipe is not repeat worthy.
Update ahead…as usual, after several days in the refrigerator this soup has developed flavor and has been very much enjoyed!
Recap
There were no real surprises last week. We enjoyed many tried and true recipes, many of which fed us for more meals than originally planned. Hopefully the week ahead will finish the soups and other leftovers. We continue to explore great recipes and healthy eating. Bon Appetit!
