The 2021 week 47 menu plan is complete. As we head into the Thanksgiving holiday I am relying on several family favorites for ease of preparation. We will be traveling on Thursday and Friday and planning a football “game day” on Saturday.
Several months ago I purchased the newest Trim Healthy Mama cookbook, Trim Healthy Future.
I scanned it briefly and put it on the bookshelf. Recently I read comments on facebook about how successful many of the recipes have become with loyal followers. I pulled the book out and am determined use it. All of the new recipes planned for the week are found in the cookbook.
Breakfast
I have another berry pancake in the freezer which will be enjoyed early in the week. I plan to make a batch of sausage muffins for a quick on the run breakfast before our flight on Thursday. The rest will go into the freezer. The breakfast pudding is the one new recipe that sounds promising. I hope to make the Aunty Pearl muffins for snacking.

The new soup recipes will provide great cook once/eat again options. Now that winter weather has set in soups sound even more intriguing than ever and I have the ingredients on hand.

Dinner
Mixed colored peppers were on sale this week and I now have enough to make our favorite fajitas and sausage and peppers. The one new recipe for Shepherds Pie looks to be a cook once/eat several meals. The white chicken chile is a true favorite and perfect for a football Saturday food fest.

Hits and Misses
We seldom go all out for a truly high carb meal, but an occasional (special occasional) splurge which is truly enjoyed is Carbonara and the very best recipe I have ever found is this one. In fact the ‘Ole Buckeye says it beats any restaurant version he has ever tried.
This was a great recipe to prepare for a quick breakfast prior to checking out of our time share. Filling and delicious.
Recap
We had such a great week in St Thomas. We enjoyed meals both in the time share and on the island. Once again I have splurged as far as diet is concerned. Now that I have returned home I hope to return to a more structured eating plan. That is part of the reason I have gone back to the basics of the THM plan. There will be a hiccup on Thursday…but Thanksgiving happens to be my favorite “eating” holiday. The quest for healthy eating continues. Bon Appetit!
